Your Grilled Cheese Needs This Soup

A classic creamy tomato soup. It's easy. It doesn't require many ingredients. It's delicious.
• 2T Butter
• 2ea Garlic Cloves, rough chop
• 2ea Shallots, rough chop
• 1/2t Kosher Salt (+ more to taste)
• 28oz Canned San Marzano Tomatoes
• 1/3c Heavy Cream
• Optional: Paramigian Rind
1. Add butter, garlic, shallots, and salt to a pan over medium-low and sweat until very soft.
2. Add tomatoes, rinse the can with about 1/2c of water, and add it to the pot (if you have a small piece of parmigian rind lying around, add it here too).
3. Simmer for 20-30 min.
4. Add cream and bring back to a simmer.
5. Remove the parm rind if you used one, then pour the soup into a blender and blend until smooth.
6. Enjoy!
