General TSO’s chicken (crispy chicken tossed in sticky sauce)
Popular Chinese-American Dish
Tossed in combination of sweet, savory & tangy with crispy loaded with flavor .
-250g chicken wash & cut into bits size pieces add to mixing bowl
Mixing Ingredients
-1/2 tsp salt and 1/2 tsp pepper
-1 tsp minced garlic
-2 tbsp rice powder
-1 tbsp cornstarch flour
-1 egg
-1/4 cup soda water or add 1/2 tsp baking soda
-Add into a mixing bowl chicken pieces and mix above all the ingredients mix well and set aside for 30 minutes
DOUBLE DEEP FRY THE CHICKEN
-(After marinating for 30 minutes
deep fry marinaded chicken twice & set aside,)
-Working in batches, carefully drop one piece of chicken at a time into the hot oil. Fry until chicken turns golden brown and begins to float, about 3 minutes. Remove chicken to a plate and allow to cool as you fry the next batch.
Once all of the chicken has been fried, refry the chicken, starting with the batch that was cooked first. Fry each batch until chicken turns deep golden brown, about 2 minutes more. Drain on a paper towel-lined plate.
(before tossing into the sauce deep fry second time for extra crispy )
MAKING THE STICKY SAUCE
-1 table garlic grated
-4 Thai red chilies cut
-3 tbsp chilli flakes
-SAUCE MIX-in a bowl 2 tbsp soy sauce, 1 tbsp honey, 1 tbsp rice vinegar/white vinegar, 1 tbsp hoisin sauce,
-2 tbsp oil /sesame oil
-1 spring green onion (separate white & greens)
SLURRY
-2 tbsp cornstarch +4 tbsp water mix for slurry
GARNISH
1 tbsp toasted sesame seeds.
-Heat the pan sauté garlic,
Stir until golden, add white part of green onion stir, add “sauce mixture” simmer sauce for 2 minutes
-Add cornstarch slurry stir until it thickens cook until the sauce thickens and is no longer cloudy from the cornstarch, about 1 minute.
-Add fried chicken quickly toss to coat , Stir chicken into the boiling sauce. Reduce heat to low and cook until chicken is heated through and has absorbed some of the sauce, about 3 minutes.
-sprinkle toasted sesame seeds, garnish green onions then serve & the faster you get it on the table the crispier .
Serve with white rice, greens or salad
