all of the popular sushi restaurants in Japan like sushiro, hamazushi, kappazushi, kurazushi have "オニオンサーモン" which is salmon sushi with onion and (a lot of) mayonnaise There are also salmon and shrimp sushis with avocados in all of those chains(with mayo!) Maybe the more traditional sushi restaurants like the one in the video doesn't have those. I've never been to one since they tend to be pricey.

My second time in my ancestral home Japan. I went to the Tsukiji fish market for a day and ordered 40 peices ov sashimi. 20 and 20 ov salmon and tuna. Everyone was shocked and I was quite proud that day.
