Thats a great idea. I have a coconut flour blueberry muffin recipe with ricotta (leelalicious.com/coconut-flour-blueberry-muffins/) So I think it should work similarly in this cake. You could replace some or all of the almond milk with ricotta or mascarpone

I poured two whole bottles of unflavored unpasteurized kombucha (Gutsy) with organic sugar. A scoby formed in a week, but one additional week later it turned from smelling vinegary to good smelling strong cheese. I have to toss it right?

Thank you! My son gave me an Instant Pot for Mother’s Day and this will be the first thing I cook in it! I like the idea of toasting the rice instead of rinsing it. The other recipes I’ve found call for rinsing. I have never rinsed my rice before in my life when I cook it on the stove. Can’t wait to try this!

If you want your second fermentation to have a lot of fizz (carbonation) you need an air tight bottle. There are other bottles and caps you can try to close as tight as possible. But usually flip top bottles with the rubber seal will give the best result in a home setting

These are some of my favorite veggies to ferment too. I have a radish video coming up soon. And funny enough, fermenting is the only way I like to eat radish. Raw or even pickled I don't really like the flavor. But once fermented they are delicious to me 😃
The detailed recipes are written out in the description below the video. They range from 1.5-2 tablespoons of liquid sweetener depending on the flavor you are making

Hi! Thank you for this very informative and easy to follow video. Do you know if you can make sauerkraut with *potassium chloride* instead of sodium chloride? The reason is to avoid the sodium and use a standard "salt substitute" in its place. I've read that potassium chloride CAN be used as a preservative, just like salt, so I thought it might also work just like salt when making sauerkraut.
That isn't anything I looked into before your comment. I had a quick read and it seems like in most cases only some of the sodium chloride is replaced with potassium chloride for best flavor results and still reduced sodium. I'd recommend looking up these posts for better recommendations from people who have experimented with it.

Yeah, after some more googling myself, I think there's something special about the chemistry involved that requires sodium chloride specifically (I can't find the link I had been reading). Salt kills the bad bacteria, leaving the good bacteria to proliferate, but maybe potassium chloride has no effect. But I think I'll try it in a small batch anyway!

@@luvvleee2000 activity slows after the first week and not as much gas builds up. So then I only check for taste every couple of days until it reaches my preferred flavor
