Great job on the build! I’d recommend taking your baffle back out and putting one in that faces UP instead of down. My Old Country Brazos had the same down facing baffle - cut it out and cooked like that for a while but recently I put in a “scoop” baffle that faces up - sits/slides in between the grate rail and the bottom of the pit. Let’s me use the whole grate without any hot spot and still cooks great. Just a suggestion:) great work!!
It all depends on how much wood you put in it. If you want it real low, you have to get creative on making and maintaining a small fire, it’s easy to cook hot, just add more wood. Ive found that I have to cut the wood splits down into small chunks to get a small manageable. Typically I will take a normal size wood split and chop it in half with a mitre saw then split it again with a hatchet, if that makes sense.
