It is best to use russet potato's as the waxy types do not work well, most bog standard white potatos are a varity of russets. The best tool i have found to remove excess water is a potato ricer, you can apply alot of even pressure with out massive effort by using the lever. While i do squeeze out the water from the potatos i do not do the same with any liquid from the onions i add to the mixture, because these add flavour, choosing to add an additional tablespoon or two of flour if the mixture is to wet. I season my potatos with 1.5% of salt by weight of the pre-grated potatos I.E. 15 grams of salt per 1 kilo of potatos, potatos require alot of salt and the 1.5% allows seasoning for the other engredients i like to add. I fry off a small single fritter first to check the seasoning and ajust as needed from there as the amount required depends on the type and age of the potatos you choose to use. No doubt the salt police will whine and moan, fine you eat bland crap and i'll eat tasty fried potatos, free choice and free will morons. Rather than using wheat flour you can use chickpea flour and avoid glutin issues. As you can see I take potato fritters fairly seriously, why? memories of my grandmother making these for me while growing up and also teaching me to cook, talking , laughing and oh so many stories and advice. All of which i have shared with my kids as Oma passed while they where to young to really remember her. Oma would have loved this video she was always practical yet inventive especially with punishments, but a kid has to learn boundaries.
