We kapampangan normally we marinate muna yung atay at baga sa vinegar garlic at pepper for 1 hour pra maalis ang lansa. Then we sautéed the pork meat separately Sa marinated atay at baga. This makes a distinguished taste how a pork kilayin taste should be. Also you have to add bay leaves or laurel and gulgul to make it authentic. Good try though:)
Do not put tomato sauce yet if the chicken meat has not extracted its oil . Pastel is more delicious is you allow first the chicken to cook well until its oil comes out ( oil of chicken )
