Apple officially states that the current M1 range of MacBooks do not work with two external displays, but I thought I would test anyway.
The two displays in this video are 2K resolution and are connected via HDMI adapters to firstly my 2017 MacBook Pro which works, and the 2020 M1 MacBook Air which does not.
