i succeeded making these noodles and it has a very nice chewing texture. the only parts i didn't follow were i didn't let it sit for 10 mins after steaming and didn't rinse twice. i don't like to waste water. what i did was i put some ice in a large bowl with some water (enough to cover the ice), once done steaming i pour the whole thing into the ice water and let it sit for 3-5 mins or until i feel the noodles are cold enough then scoop them up and place them in a bowl. save the ice water for the next batch. add more ice if not needed. my niece rolled them in between her fingers to get wiggly shape, which is kinda cute. will definitely make these again. it's fun to make will little kids or a group of people. easy recipe but just a bit of work.
