How To Make Loh Shee Fun or Rice Pin Noodles (银针粉)

Today, I’m going to show you an easy, shortcut version on how to make authentic Hakka Rice Pin Noodles (a.k.a Loh Shee Fun or Rat Tail Noodles)! Traditionally, rice pin noodles are made with soaked grinded rice, similar to the method I showed in a previous video about how to make “rice cakes.” This recipe consists of only two ingredients, rice flour and water, and you’ll be surprised with the results: soft, bouncy, and chewy noodles! This video will showcase two different methods. The first method is kneading and shaping the dough manually and the second, is mixing the dough with a machine and pushing the dough with the heel of your hand. Although the end result of one may look better than the other, both results are equally good in taste and texture! You can use these noodles in a variety of ways from stir-fry to soup or even mixing it in with a savory meat sauce (as shown in one of my videos which I will link in the in the description box!) Enjoy!
Ingredients
400 grams Rice Flour
600 ml Water
Additional 80 grams of Rice Flour
Makes approximately 1.2 kg of Rice Pin Noodles

I thought there is a short cut, alas no, 1st method way it will take a whole day(figure of speech) to make enough to feed the whole family. This is what they do during the sixties and seventies when life was simpler then. Good effort thanks for these tips. Daily life pressures I bought mine from the grocery shop, and I am cooking them tonight, Claypot Loh Shee Fun with seafood.

@@TheKamiBunny My impressions, after Brexit the business/economic environment in England will not improve in fact going backwards. Convince me that I am wrong.

@@yttean98 well, depending on the school of economics you are in the results with vary. But both schools agree that in the short term, the UK economy will suffer as backlash from EU as long as the UK doesn't hold an essential resource the EU needs. ATM the vaccine production in the UK is greater than EU sooo theres that(but noone wants to hold that over someones head), however theres no industry at the moment that the EU absolutely has to get from UK. In the long term, this might spark a sort of revolution in industry within the UK creating opportunities to develop new industries like small scale and local farming diversification, food processing and technology development as the UK stops looking outside and starts looking within it's own borders. Coupled with the emerging markets(hopefully India in the next 10 years?) And reviving markets in the energy business, theres a good chance that the UK may come out with a stronger economy than if stuck as a partial member of the EU Doesn't change the fact it will suck for the middle players for the next 5 years minimum.

I applied a recipe close to this one with one difference: It had 1 cup of cornstarch as well as rice flour. After couple of failed attempt to make regular stick rice noodle I turned to stick noodle. My stick rice noodles easily dispersed but pin noodles saved their forms. Pin noodles are fine but I kindly ask you to help me to make stick noodles. Is there any method I can make stick noodles without dispersing? I see tapioca or potato starch in recipes, probably these starches are more cohesive than cornstarch or wheat starch but in my country, it is hard to find tapioca or potato starch, even if you find them, they are too expensive. I would really like to find a way to make stick noodles with rice flour and cornstarch if there is.

@@Seasaltwithfood Thank you for reply but I have only cornstarch. As I said, potato starch is not always available and it is expensive in my country but in your thick rice noodles recipe potato starch is required unfortunately. ☹️ Potato starch must be more cohesive than others and not easily dispersed, as far as I understand.

That pinch and roll is too slow. What I did was pinch a thumb sized piece, roll in your palm till it's like a thin rod, then gently pull the desired length. It's alot quicker. You will find the ends are nicely tapered. If not roll gently in your palm

Wrong method! You only need to add very hot water to the rice flour and wheat starch and knead the dough to make this. Check out other RU-vid recipes for this.
