The reason this works is because pressure changes the boiling point of water. When the little bit of water in corn kernels turns to steam, it pops. Sealing the pot means the pressure goes up when the air gets hot, which also raises the boiling point of water. When the pot is opened the pressure suddenly drops and all the water turns to steam at once, popping every kernel at the same time.

The machine I seen when I was in Harbin, China was like 3x the size and the sound it makes really resembles a cannon. It tastes like plain popcorn but crunchier and smells like popcorn with kinda burnt and smokey aftertaste. Good experience overall

For the Westerners who have never tried this, this kind of popcorn is very different from the popcorns you see in cinema. Different texture and different flavor. It is much more chewy but somehow rigid at the same time. Normally, it does not come with butter or caramel (although I have seen people make caramel coated ones, it is much rarer and is seen as a weird twist or gimmick). It's usually very bland, and it is supposed to be bland. In many countries, it is seen as a boomer snack. Also, this is called popcorn only in English name, and usually, each country has their own name for it and does not identify it as popcorn. In Korea, for example, you can find this everywhere, but if you ask for popcorn, nobody would give you this because "popcorn" specifically means Western cinema popcorn. It's like "Ricecake". It's called a cake in English, but not really considered a cake by Asians. Similarly, this is technically a "popped corn", but the way you pop the corn is different. Western popcorn is via heat, and this popcorn is via pressure and explosion. Different recipe, different food. One does not replace the other. EDIT: There seems to be a lot of smartasses in youtube who are too lazy to google how this works, so I will just explain it a bit more in detail. YES, OBVIOUSLY this popcorn uses heat. Every goddamn thing uses heat. But unlike Western popcorns, heat is a mean to raise the pressure in this case, not to cook corn. If you google how to make a Western popcorn on google, it will immediately tell you about the temperature (ex: cook kernels at 400-460 degree fahrenheit). However, for this popcorn, we do not care because all we care about is the pressure inside the canister. The canister has a pressure gauge, not a thermometer. We apply heat to raise pressure inside the canister, but that heat is not enough to make kernel into popcorn. When we raised the pressure high enough, we open the canister which causes an explosion due to the pressure difference between atmosphere and the inside of the canister. And NO, this is still not a "popcorn". It is called popcorn only in English translation for the convenience of English speakers. Most countries that have this don't call this popcorn. Why? Because this does not have the same recipe. This is more similar to puffed rice than popcorn. This is not a superior or inferior popcorn. It's just different food. Just wrap your head around the idea that different culture can have different food. It's not that difficult to understand. You do not have to feel the need to prove the superiority of your microwave popcorn. That's like comparing Bulgogi with Bacon. It doesn't make any goddamn sense. Also no, this is not burnt. In my limited understanding, it is actually way difficult to mess this up than cooking western popcorn. Western popcorns burn because you cook it with heat, and some kernels never pop. But in this case, you forcibly blow the kernel into popping. You rarely get an unpopped kernel and everything is even cooked the same. You can obviously get hurt by the explosion while cooking, but your corn will come out fine.
