Another SUPER Recipe. I have been baking bread for MANY years. And the round loaves have been so complicated for me to follow and REALLY want to Bake. You have changed my way of thinking. Hello Jin, I tried making this bread today and I was so excited when it got double in size rather quickly even though it's winter where I am. I used instant yeast and 50 degree C water and 600g high protein flour (bread flour) and everything worked beautifully. I deliberately left the first proofing for 1 hour. The dough was rather moist and I followed your instructions and didn't use too much flour when I folded and pressed it a few times. The dough was formed nicely except that the surface wasn't as smooth as yours. All was going well except that I'd left the second proofing for too long!!! (like 45 mins) and the dough got to double in size so when I slashed it with a knife, it collapsed :( . I used a square corning ware to bake my round dough (lol) and it came out crusty and nice, even though it was a bit dense and was only about 60% of the height of your bread (denser on the bottom than the top). My daughter said that the bread was delicious! I will try it again for sure until I get it to look as high as yours! Thanks Jin.
Your dough collapsed because of over proffing for second rise. just let the dough to rise until 1.5 times in size not double.thank you for taking your time to write back to me 🤝 wish you success next time.
Hi Jin I finally made tis bread last nite cos i just cannot wait. The outlook is the same as yours .has a crusty crust too and the brautiful sound when u tap it...but..inside dense but not wet..🥰what i dont understand is during process..i observe the following: - my dough did not proof as big as your video - i use room temp water bcos i used instant yeast - my proved dough was very wet and i had to keep adding lots flour until it could form a dough ball. Hope u can adv me what could hv gone wrong🙏
Just put the bread dough on the baking pan and place it on the middle rack of oven, pour 1 cup of water in the baking sheet on the bottom rack when baking.
