自制火红的贝果。这款面包超健康,是个无蛋,无奶,无油,无糖,无面包机食谱。食谱水分含量偏低,对付这种偏硬面团也不需要揉面到很久,整个手揉过程不到6分钟,反而选择用足够休息时间和轻盈揉整理方式来拉出光面。而且这食谱不用冰箱隔夜发酵,不用2发,采用了直接一发的方式,快速直接。贝果烤前需要用碱水短煮,这可帮助贝果表面上色,而且贝果稍微烫过表皮的酵母死了就不会膨胀了,增加表皮韧性扎实的口感。新鲜出炉的贝果,外皮酥脆,热胀冷缩并有细小脆裂声,稍凉后形成经典的砖石纹。切开来,内部结构绵密扎实,但却蓬松回弹力很好。搭配跟芝士奶油,脆韧咸香,口感超有嚼劲。
收藏方式:烤好10分钟内吃,口感最佳。之后吃前重烤,烤面包机中火几分钟。彻底凉透,收在密封塑料带,室温可存留3天,冰库可存留一个月左右,要吃前解冻重烤。
Let’s make popular Bagel. This bread is so healthy with no eggs, no milk, no oil, no sugar, no bread machine. Relatively low moisture content recipe. To deal with this relatively hard dough, no long tiring hand kneading process needed. The whole hand kneading process takes less than 6 minutes. Instead, choose to use enough rest time, light kneading tiding method to pull out smooth surface. This recipe also no need overnight proofing in fridge, no two proofing, but use direct one proof method, fast and direct. Before baking, bagel needs to be boiled in alkaline water, this helps bagel browning nicely, also with slightly cooked surface’s yeast died stop growing in the oven, give skin chewy and dense texture. Freshly baked bagel have crusty outer skin, expand while hot and shrink while cold with small cracking sound, slightly cooled will form signature diamond mark crust. Cut open, internal texture is neat and dense, but fluffy and spring back easily. Paired with cream cheese, crusty salty flavor, super chewy texture.
Storage Method: Best eaten within 10 minutes after baking. Afterwards, reheat before eating with toaster medium heat for few minutes. Let cool thoroughly keep in airtight plastic bag/zip lock bag at room temperature for 3 days or freeze for about a month. Thaw and reheat before eating.

=Dough面团=(6pcs, 81-82g/pc)
300g Bread Flour/High Protein Flour高筋面粉
5g Salt盐
3g Instant Dry Yeast速溶酵母
20g Honey 蜂蜜
170g Water 水
=Soda Water苏打水=
1kg Water 水
10g Baking Soda苏打粉
7g Honey 蜂蜜
=Toppings 顶部布置=
8g Black Sesame 黑芝麻
8g White Sesame 白芝麻
2g Salt盐
5g Onion Flakes洋葱片
Cream Cheese芝士奶油
Pinch of Parsley 少许荷兰芹
(Preheated Oven 200C Convection/(220C Convention): 17minutes) (Cover with foil after browning)
(Top Bottom Heat, On Fan Force, On Steam, Middle Rack)
(预热烤箱200C风炉/(220C没风炉): 17分钟) (上色后盖铝箔纸)
(上下火,开旋风,开蒸气,中层烤)

Hi Iwen, I tested this recipe twice and so far so good. I also tried the bagel this morning which i have frozen for a few days and it still tasted good. Thanks for your great sharing. My daugther has suggested me to try with oat flour, but I am wondering if i can still use the same amount of flour or i need to mix with high protein flour? Thanks.
