金黃璀璨的番薯算盤子,好吃又不失美感的一道吉祥菜! Sweet Potato Abacus Seeds

婆婆又來咯~今天煮不一樣的算盤子,聼朋友説,這個叫福建人的算盤子,但是好像沒有官方證明..所以也不知道這個傳説從何而來 哈哈哈哈哈哈!你們誰有聽説的嗎?留言告訴我!
材料 Ingredients:
- 兩個番薯 two sweet potato
- 適量的木薯粉(約3大湯匙的量) some of Tapioca Starch( about 3 tbsp)
【醬汁】
- 一片吊片 1 dried squid
- 兩片的木耳 2 pieces of black fungus/ear wood
- 30-50克的蝦米 30-50g of dried shrimp
- 一至兩湯匙的蠔油 1- 2 tablespoon of oyster sauce

Never heard of Hokkien Abacus but it sure looks good! Orange colour is so beautiful. THANK YOU, Popo n Mei Mei for sharing. Learnt something new. And of course it is heartwarming to watch u cook together in the kitchen. 0:50 PS. Never seen or heard of Snake leaf! Again smthg new. Wish i had some cos I have a sore throat!

算盤子是客家不是福建菜(傳统是只有用芋头做,並沒近代市面出现那种南瓜版本,可能现芋头贵創新用南瓜做,不知道)。我们祖籍是梅縣客,己姑祖母做客家菜就沒有算盘子这道,它是大埔縣的客家菜,也沒鐳茶,它是别个客家縣的菜式。我是长大後外食,才接触,吃到來自別縣的客家人的客家菜式。现在我也学会做这兩道了,很好吃,很爱吃。

I enjoy watching Granny cook her food. Her recipes are simple and the food is delicious. I also like the way Granny answers her grand daughter's ( happy moi's ) questions during their cooking time. She answers in a natural and unaffected way. Thank you for sharing your recipes with us, Granny.

算盘子是我们大埔客的名菜,也是妈妈在世时的拿手好菜之一。在外面尝过,但就是缺少了那份妈妈的味道,当然芋头的品质也很重要,chewy 得来也必须有芋香味。

Many uses pumpkin as a substitute to yam/taro.

I made pumpkin once, think it's not as delicious as taro. Personally prefer taro version. Nowadays taro quite expensive, pumpkin more economical.

为什么没放蒜米?难道会盖过其他食材的味道?

不用放蒜米,要很好吃和香,吊片絲蝦米要放多放够,像视频放多多就是了,也不要过多。还有要放 minced 豬肉,吃芹菜的最後加些芹菜进去。放東菇絲木耳絲。放点魚露。 外面卖的,要控管成本,丁点吊片丁点蝦米,肯定沒自家做的好吃。
