【Mocomichi Style】#053 Authentic Italian carbonara
【Ingredients/amount】
Penne rigatoni-------200 g
Pancetta----------------120 g
Garlic---------------------2
Olive oil------------------1 tbsp
Egg-------------------------2
Salt and pepper------a little per each
Parmigiana (grated)--------------60 g
Pecorino cheese (grated) -----40 g
Italian parsley (chopped)-------desired amount
Coarsely ground black pepper----a little
【Cooking process】
①Boil penne in hot water with olive oil (desired amount).
②Crush a garlic, cut a pancetta into 6 - 7 mm pieces.
③Heat olive oil in a frying pan, put a garlic in it to give it garlic flavor, take the garlic out, put a pancetta in it and fry it up till it becomes crispy, take the pancetta out.
④Put eggs, salt, and pepper in a bowl and mix them up, add boiled penne, boiled water (desired amount), and remaining oil in the frying pan, mix them all up.
⑤Grate and add the parmigiana and pecorino cheese in ④, add the fried pancetta (keep some of them for topping) and mix them up.
⑥Decorate it on a plate, top it with the remaining pancetta, sprinkle the Italian parsley and coarsely ground black pepper.
【Tips】
・Bacon can be used for this dish instead of pancetta.
・You can always add white wine when you fry up a pancetta.
