Creamy, Cheesy and “Bacony” Vegan Carbonara Recipe.
It Only Takes 15 Minutes To Make !
INGREDIENTS
- 4 servings
1 large clove of garlic
1 cup sun-dried tomatoes
400ml soy-based cooking cream
1 cup vegan Parmesan
1/2 teaspoon mustard powder
380g cooked spaghetti in boiling salted water (1 tbsp salt)
1/2 cup pasta cooking water
olive oil (around 3 tablespoons)
30g salted vegan butter
black pepper
METHOD
1. Peel and crush the garlic. Chop the sun-dried tomatoes.
2. In a large bowl, pour the soy cooking cream and mix well with grated vegan Parmesan cheese, mustard powder. Set aside.
3. Cook the garlic and sun-dried tomatoes with sufficient olive oil for a minute. Pick out and discard the garlic from the pan.
4. Add the vegan butter, pepper, cooked spaghetti and pasta cooking water, mix well.
5. Remove the pan from the heat.
6. Pour the vegan Parmesan sauce, mix well with the spaghetti.
7. Serve with additional black pepper and a grating of vegan Parmesan.
8. Enjoy.
