30 GUEST DAY! So much Fun 

James, found you just a few hours ago and been checking out your project, it's looking good my man. I'm a Fil American and have a beach property in Batangas and I've always toyed with the same idea but never really got around to it - wish I had your handy skills and motivation haha. I'm in the Restaurant-Bar business so hospitality is in my blood and I've spent enough years back home to have a bit of a grasp of what will work. An idea for your cantina, along the side have an open style kitchen with grills, or better yet a Texas barbecue pit, introduce Texas style BBQ to the locals, it'd give you a niche that no one else has. Maybe on certain weekends do something like a New England version of a fish/seafood boil, not exactly Texas, but it's something that can work for large groups of 20 plus. Stuff like that are less prep heavy (less labor) and it allows interactions between guests. It's just a different approach to the boring ole buffet, you just have to tweak certain items to cater to the Filipino palate. I can always give out ideas for logistics, prep work and service stuff if you need em. Good luck to the two of you.

I've got about $100k of catering equipment in Germany and a bit more in the USA... Years ago, I was doing catering for events plus using this for food shows, etc. I couldn't help thinking that is what you need for large groups or events... Also, maybe hire some permanent staff as possible so Mel can transition to managing would be a suggestion... It makes life easier... The rain, along with the cleanup, really helps see what the finished areas will look like... Another great session, you two are doin' it indeed! Hi James, do You have a smoking 🚬 area? Some places that have a smoking area, they put the smoking area in the worst spot. No shade and it's in the parking area with no seating. When I finally get settled and get my farm build started, I AM going to make sure it is all wheelchair accessible and I will have a very comfortable smoking area for the smokers ONLY. I don't drink liquor or beer, but my one vise is smoking.

For rainy days, do you have one big open overhang meeting room for guests to gather for meals and talking?
