I cut my leeks lengthwise before I chop them, then wash them, because they have a lot of dirt in between the leek leaves. Potato leek soup is wonderful.

Leeks are like a mix between an onion and garlic. Nothing like wild spring leeks. Wild leeks are found on the side of little streams/creeks. They are way way better than anything you can find in the store!
