In Mexico, you can have fried pork meat fried in a big steel container, it's called "carnitas" (little meat pieces), and you can have almost any part of the pig like this. Parts included are ribs, belly, leg, head; which includes nose, ear, palate, tongue, brains; and also the insides such as liver, heart, kidneys and yes, uterus, it's called "nana" in this specific case, and no, I don't know why, we mexicans are just weird sometimes. Carnitas are delicious for the most part, but I stay away from the most unusual parts like the insides.

Talk to a local butcher, get choice cuts. My dad is friendly and generous with butchers and ask for what they believe are good cuts and never buys them already set out for sale. Get really good meat that way.
