Great Grandma Wunder made "butterballs". Bread crumbs, eggs, butter, cream, and nutmeg. Served in chicken broth. Amazing!

'Quenelle 'is the word that you are looking for to describe the shape, using a spoon to form the oval shaped dumplings. thanks for posting.

thanks giving here in canada, we had turkey /rot colt/ gravy /mashed potatoes /corn /and stuffing . I did make a meal last week with dumplings. used pillsbury pop and fresh dough. cheers Marta

Morning Marta, another trip down memory lane for me. My job as a child was to grate stale rundstuck for the breadcrumbs. I don't recall my Oma using nutmeg though, is that a southern German thing?

For when I do Keto with intermittent fasting I usually have broth once a day. When not eating carbs in the diet the body doesn't hold unto salt very well. I the body loses too much salt one gets what is called 'the keto flu'; a mild persistent headache. By increasing salt intake using broth this is no longer an issue. The keto or low carb diets certainly help with health issues like type 2 diabetes. I try and behave most of the year but during my birthday I like to get Edle Tropfen in Nuss classic brandies or fruit brandies chocolates imported from Germany. My favorite chocolates in the whole world. Why? Because I deserve it! LOL

I've not had many soups with dumplings, and these look very tempting except I do not like nutmeg. I might give these a try without adding nutmeg, do you think I could substitute cinnamon or something else?

Thanks Backy! I included ingredients in the description box this time. I think in this case nutmeg cannot be replaced, I would just make the dumplings without it.

Leberknödel Suppe 🥳🥳 My fav that you listed, but I make with large (regular sized) dumplings. As far as clear broth...what's better than dunking your butterbrot in broth...bite for bite? Makes any topping taste so much better. 😁Btw Marta, have you ever had Schlachten Suppe?

@@cooking-the-world When you do hausschlachtung, you'll be boiling the kartoffelwurst, blutwurst and all your bones (marrow plus small bits of meat). That water has then a lot of those small bits of meat, but also a wonderful broth. Since you do a lot of camping and travel to more rural places, I thought you might have come across it. There's still plenty of gasthauses that have their own butcher shop, thus have Schlachten Suppe on the menu from time to time.
