I think not allowing knives to have lock backs is terrible. It is a safety mechanism to keep you from cutting your fingers. I learned this as a kid. A lock back doesn’t make you a murderer or a criminal, it just protects your fingers.

Its pretty stupid, especially if you consider that carrying a fixed blade up to 12cm blade length is totally fine in Germany (no "fighting knifes" of course). I can also carry a giant folding knife with safety as long as you have to use 2 hands for opening.
@yurrev
@yurrev 5 лет назад
In Germany, you can't carry a knife that is BOTH lockable and one hand openning. If your knife is one handed but non locking, it's ok. If it has a locking mechanism but is not one handed openning, it's also ok.

I think it's worth mentioning that sharpener with the ceramic, coarse and fine slots, is primarily designed for kitchen knives. That's important because some outdoor knives use a different angle at the cutting edge than your average kitchen knife, and so it might not be ideal to use. I bought one on Amazon a year or two ago.
@funtrain23
@funtrain23 5 лет назад
I love that last system! So precise and systematic, and not expensive! But I wish it has some sort of markings that determines precisely what angle it is set to, as well as what angle is recommended for different knives and purposes. Great video! I love it!

If you want a finer edge, use a strop, or the rough side of a leather belt, drag away from the edge on the rough leather and you will see that it will most likely make a fine edge, I've tried it on my survival trip in the Czech republic and I had my little dc4 and my belt, worked very good, so you should try and use a strop

@Slingshotchannel
@Slingshotchannel 5 лет назад

Great Video Joerg. It would be nice for you to do another sharpening video using that Ruixin device from Gear Best. I myself was considering one of those type, but never am sure if I am using the correct angle for a certain type of knife or purpose. By which I mean different purposes can require different angles on any same knife. For example, cutting boxes versus carving hardwood with a pocket knife. Plus, I am sure Gear Best would appreciate the extra promotion as well!

The hockey puck looking, two sided stone is one that we use in the fields for a scythe or axe. The little green one, I believe to be a hard Arkansas stone. While I have used the other methods as well, I prefer a series of long rectangular stones as I am in the habit of sharpening many different sorts of blades, from swords to straight razors. As long as a stone is kept flat by resurfacing, you may rely on it for a good long time. Great video, and perhaps you'll do one on blades made of O1 steel.

only thing i am wondering about is all whetstones that i have seen used are either constantly kept wett or have just soaked 24hours so tell me what's the difference between wetting one and these ones that seem to be quite dry or at least not constantly drenched in water
@dystopianparadise5916
@dystopianparadise5916 5 лет назад
When you sharpen a knife, you are grinding away metal (and stone) and that stuff needs to be cleaned off periodically or it will interfere with the process. You can use water or a rag or both. To whet something is, to sharpen, and has nothing to do with moisture of any kind.

I got my Jorg Sprave special edition knife in the mail the other day...number 342 of 600...and I've noticed a design flaw. When force is applied to the folded blades the sharpened edges contact steel within the knife flattening the edge. So, if you have one blade opened and are holding the knife the pressure from your grip forces the sharpened edge of the other blade to be pressed onto steel. Isn't there usually some kind of stop on the blade itself near the handle/axis point on folder knives?
@TheBeefSlayer

Yes. It definitely shouldn’t be able to let the knife sharp and to ever contact the handle ever.

Carbide sharpeners are really good for reshaping the edge, a good whetstone will have any blade razor sharp as long as you find the proper edge degree. Those seem like decent knives, but I wouldn't mind seeing like a ZT D2 steel against one of those blades, but those are $250+ USD

Im pretty sure that you are supposed to use that clamp to fix the knife in place and you don't have to hold it. Just put the knife blade in between the metal plate and the sharpener it self and then tighten the knob at the back and it will clamp on the blade. Ofcourse holding it works too 😊
@superrobotspacekingii4720

No that doesn't work. I have the same sharpening kit and i tried it, the clamping force is way to weak to hold a blade in the same position. The way Jörg used it works absolutely fine and the manual also says this is the way it is intended.

@carlh7795
@carlh7795 2 года назад
The question is, what is normal? D2 is a very common steel for knives. So I consider it normal. It's a budget steel, but quite hard and with very good edge retention for low cost. The downside is it's not really stainless, but doesn't rust easily. Semi stainless, due to under 13% chromium and fairly high carbon content. The chromium bits are fairly large, so for a truly sharp and long lasting edge, it should be sharpened on diamond or silicon carbide. It's not S30V, but performance is close enough for a game of hand grenades, for much less money... and less corrosion resistance. I wouldn't aggressively sharpen D2 on a belt sander, since it doesn't tolerate overheating well.

@superrobotspacekingii4720
@superrobotspacekingii4720 5 лет назад
@Slingshotchannel
@Slingshotchannel 5 лет назад

You are using the pull through sharpener wrong, you just need to pull it one way that is from the heel to the tip. Don't use it in both way, it will give your knife a curve in the middle and it will look like a karambit. The tip also didn't get sharpen properly. This has happened to many of my mother's knife so I don't want anyone to get the same result, I'm talking from experience so I think you should change the way you use the pull through sharpener.

Glad I wasn't the only one cringing when he started sawing on the sharpener.

@@RubixB0y Yes, you're right. When it come to knife sharpening, I know many things but not everything. I really like sharpening a knife properly even though I'm just 15 years old. All the knife I sharpen is razor sharp, I assume you maybe have the same skill as me or maybe more.

Man..you dont get it or ? Maybe he knows that ? I know it too, every "knifeguy" know it, ( And they would never use a pull through sharpener for their own knifes ) but he wont do it 100 times. The task was to resharp a knife ONCE that had a little dull at one point. So he did it the most effective way to remove it ONCE.

Exactly. The blade was blunt at exactly that spot. Why grinding away the rest of the edge?

Sooo... D2 knifes will essentially never get dull, assuming it will be used to cut food, wood and cardboard?

They get dull it might just take a longer time than with a softer steel. As often there are no easy answers to this as it gets quite complicated when you go into detail.

A whet stone, not a wet stone. Usually no lubrication is needed and recommended for whetstone sharpening, although there are exceptions.
