There seems to be many misunderstandings about biogenic amines. Biogenic amines are potentially present in ANYTHING that can be considered nutritious. Once there is a breakdown of the food it will build up in biogenic amines. You cannot cook away biogenic amines. The bacteria may die off but the biogenic amines remain (always!). Bacteria does not equal biogenic amines. Some foods ripen naturally through developing a higher rate of biogenic amines like strawberries and tomatoes and legumes and some types of nuts so therefore it is not removable in those foods once they have built up biogenic amines in their ripened state. Histamine is only one of many types of biogenic amines possibly found in foods. Histamine is a neurotransmitter which has many different functions in the body and can also effect our moods. There are 4 different types of histamine that perform different functions in the body. Histamine 1 is the H1 that we are most familiar with that gives us what looks like an allergic reaction (swelling, hives, runny nose...). Histamine 2 (H2) activates stomach acid and speeds up heart rate (Pepcid is an H2 blocker). H3 exclusively expressed in neurons and regulates our circadian rhythm. It is easy to get fresh beef: Find a local farmer, and purchase a half or whole beef. ASK how long the beef hangs before it is cut and frozen. Often the beef hangs for very little time... because time is money, and the beef ties up space in the butcher's/processing plant's coolers. If you buy a whole beef, you can arrange to have it custom processed - cut the way you want AND cut and wrapped right away. Keep in mind that the meat will not be as tender, and you may need to change your cooking techniques, or just chew it a little more. A whole beef should fit easily into a large chest freezer. Farms and ranches that specialize in 100% grassfed and grass finished beef often have traditional breeds or strains of cattle that do not need any grain to grow and marble well without grain. These animals are generally more compact than the type that the feedlots can use to sell a lot of grain - big, leggy, and inefficient- and they take up more room in the freezer. If you have a beef animal custom processed, you can also get most of the organs (several commonly enjoyed 100 years ago and still enjoyed elsewhere are difficult or impossible to get, unless you process the animal yourself). Make sure you let the processor know you want all the bones and all the fat. Most low carb/paleo/keto eaters will also want to specify 70% lean 30% fat hamburger. While it will be a chunk of money to lay out at once, it can work out to be quite economical - and you will have so much more control over the quality of your meat. Plus, buying directly from the farmer helps keep these people in business. We prefer 100% grassfed/forage fed (no grain), with no vaccines, chemical deworrmers, or chemical external fly control. There are plenty of people who still know how to raise cattle this way, and keep them healthy naturally. Bon appetite!

Once you freeze/preserve it, it won't be fresh, anymore, and the histamine levels go up from the bacteria growing on the meat (just small amounts and not enough to give you food poisoning). She means REALLY fresh.

I buy my beef/bison on line and it comes frozen hard as a rock. It is grass fed until slaughter. It's as close to fresh as you can get.

This was very informative. I developed histamine intolerance after mold exposure which is a common culprit for mast cell activation. Interesting enough, my root cause is mold but in order to get the mycotoxins out and heal, I have to calm down the histamine and mast cells first. Oddly enough, I don't have the typical allergy like symptoms such as itchy skin, flushing, rashes, sneezing, or what most could contribute to an allergy. Mine are anxiety, feeling tired but also wound up (probably from the increase in cortisol), very irritable, unable to relax, and just this tenseness in my stomach, and later diaherrea. Something I gleaned from this was the big connection with bacteria. I kept having issues with my apap (automated cpap). It was then when I learned mold and bacteria love the same environment. SIBO is also very common among mold toxcity. I recently had 2 inner and outer ear infections that were so bad, they swole shut and I couldn't hear. I tried natural solutions as I'm aware of what antibiotics can cause but I was in alot of pain and it wasn't subciding so I went on a round of antibiotics. I had already suspected SIBO and after the round of antibiotics, I noticed my histamine intolerance has gotten better. That being said, this video helped connect the dots. Something I would like to point out is someone asked about the supplementing progesterone to help histamine. From what I have read, there is a connection with estrogen dominance and histamine. I personally use progesterone for estrogen dominance so I have found this interesting. My hormonal, histamine, suspected SIBO, gut, mood, thyroid/adrenal, and more can all be caused from mold. That all being said, mold toxicity is a number one cause for mast cell activation so if anyone is suffering from histamine intolerance, it's worth looking into.

I think exposure to toxins will be the initiator of poor gene expression for the dysautonomia, cfs/me, fibro, EDS venn diagram. I eat a clean ketogenic diet now to move the most toxins from my food source and is the best anti-inflammatory i know. There is another great video by elliot overton on thiamine, histamines, oxalates, amd diet in general. Very interesting. 🙏🤗

Ummm no. I grew up in an Italian house, and my life has pretty much been a nightmare since childhood. I NEVER felt well after eating, and my mom was always feeding us pasta, sandwiches with cured meats, tomato sauce.... Like my entire childhood diet was 100% high histamine 🤦🏻‍♀️

How long were you following gaps? Were you consistent? Many people needs mny months of strictness or even complete elimination to beef and butter first to lower the inflammation. Its hard to know what it is.. Oils..the pan you cool in..but your whole environment has toxins. Smoking alcohol fumes and air pollution..fires. Molds. Plastics are in everything.. Have you been to a functional doctor? They usually have. Wholelistic approach and big picture. Some people switching to grss fed/finished does wonders too. Have yoy elliminates dairy? Eggs? Those are common offenders. And sorry in advance fornany assumptions ive said.

If I drink three glasses of wine I have something similar to an asthma attack. Also, years ago, I went out to dinner and had about 3 champagne cocktails and had the absolute worst reaction with severe stomach pain and diarrhea ever. I never knew what caused that, but now I do.

@First Last it takes lots of time to undo what the past has done. Many months. The diet needs to clean out your mitochondria and become fat adapted to use fat efficiently. Not an easy task after many years of sugar based diet. Frankly I think it takes closer to 6 months to do that when in ketosis. Maybe 3 months for those not insulin resistant/obese. There could be otyer sources of everyday causing inflammation in your immediate environment.. Yoyr bed/pillow, dry cleaning, pipes, unclean water, added spices and beverages, "natural flavours", thickeners in dairy.. But time is the biggest factor along with consistency. It took me 9 months to notice my skin change for the better and hunger dropped. Finding out the protein to fat and salt balance out as well is important.

@First Last well interesting enough mast cell issued mcas/mastocytosis is common in my illness community..ehlers danlos syndrome. You should che k it out...you never know. How long were you carnivore? Did you eat strictly or with spices dairy.. Grain fed meat or grass? Those things are probably most important the more immune related it is.. :/ i havent gotten to full carnivore for more than a few days.

@@Viv8ldi Iodine has been used for over a 100 years as therapy for many things. I don't think credit can go to just one person. In terms of histamine, reduction of histamine is just a noticed clinical side effect.

@@shelleysmith6667 I got huge improvement eating only fresh-cooked Costco beef and butter for 2 weeks, plus multiple antihistamines and supplements. But prrparation is key: pressure cooked or sauteed from frozen, or a quick cool-water thaw, eat immediately and freeze leftovers immediately in thin portions that can be very quickly reheated.

NAC is given in hospitals ER to prevent overdose fatalities. I highly doubt it is harmful for histamine as it's such an excellent detoxer...???

I’ve been on synthetic progesterone for many years as a treatment for Endometriosis symptoms, this has never improved my histamine intolerance. Only dietary changes like cutting out/back on high histamine food sources and learning to understand my menstrual cycle, to figure out the connection of elevated estrogen has been proven to work for me. However, I strongly believe it’s about gut health all and all. PEM gets worsen from even mild exercise and I suspect it also has to do with histamine intolerance.

Dead bacteria that have been cooked do NOT "spring back up." However, new living bacteria will land on the meat and start growing on it after it cools down.

Wouldn't it be the case that the longer you cook bones for bone broth, the more it ages, and the more histaminic it becomes? That's what I've been told by a naturopath.

You are correct. Meat broth is better, cooked only until done and at low temps. I make a large pot and freeze it in jars until I need it.

@@dana102083 Genetics. I never suspected such a problem. Although I have allergy symptoms, two separate full panel allergy testing showed zero allergies. Just for fun I got genetic testing done and one of the health screenings showed I had a genetic predisposition to histamine intolerance. My body possibly did not produce enough of the DAO enzyme to handle histamine. I thought "what the heck is histamine intolerance?" I looked it up and realized my migraines, my stomach problems, my congestion, hives, and the episode of anaphylaxis now made sense.

so if you’re > 3 months pregnant you are protected from histamines. I know people who do a ketogenic diet often suddenly find that they are forced to stop eating this kind of food because of morning sickness and I know morning sickness is usually worse in the beginning. I wonder if your body (or baby) is making you purge stuff to keep it safe

The pregnancy self-protects the baby's chance of survival by upping mom's hormone levels for about 12 weeks. If baby is fine, baby is also adding its own hormones which is pretty nauseating for most moms period at the 12-week mark the hormones by the mom drop off and the baby either thrives or is miscarried because it is not thriving. Fyi... my OB explained my own miscarriage when we saw a molar pregnancy in the ultrasound, and why I had no debilitating morning-sickness as usual. I was hoping it meant I was finally having a girl after birthing 2 sons previously. Note: I later had 2 more sons... oh well. 😊

wow it does look like this is what I been battling for 2 decades! My ears swell and nose swells with breakouts and bleeding! Nos bleeds bad at times!! Is this my issue. I sneeze and itch at times to. Golly I am grateful to discover the issue!

You might want to try a low histamine diet or an elimination diet and keep a food diary to see if it helps you and see if you have specific culprit foods that may be triggering these episodes for you.

I too just discovered I had this. I've got the genes for it unfortunately. I've had symptoms all my life but in the last 20 or 30 years they've gotten worse. I was gobsmacked when I did genetics testing and it suggested I was highly likely to have histamine intolerance, which I immediately researched. I looked back over my life and put together all the seemingly unrelated symptoms. I wondered how a bad gas attack with constant belching could possibly cause my nose to start running like a faucet with difficulty breathing. hives, Intermittent skin rashes, migraine headaches, intermittent digestive issues, explosive sneezing and constantly having to blow my nose, sore muscles, high blood pressure. I never put them all together into one problem before. I have every symptom. I've been taking DAO for 5 days and I'm trying to adjust my diet. I already see improvements in gassiness and head congestion.

Sore throat, sinuses pressure, stomach cramps, fatigue, frequent urination, headaches, etc. I was tested for throat infection, urinary tract infection, flu, chest x-ray, etc nothing, they're all negative. Could it be allergies? Could it be histamine intolerance? Anyone had the same symptoms? Every time I went to the doctor he prescribed me some vitamin D, because I had low levels of vitamin D. Lately I have been taking over the counter vitamin D3, but I have these symptoms for about a few weeks now. I just came across this video doing my own research, hoping desperately to find some answers. I had the same symptoms many times before. They come and go more than e a few times throughout the year.

Yes, I have the same symptoms. Could be allergies, could be histamine. You can rule out allergies if you have allergy testing done. If that's negative then, yes, it could be histamine intolerance. Just try the low histamine diet for a while. That should tell you if you have it.

My food intolerance test revealed all very high histamine foods. No wonder I itch all the time when I eat/drink them. Unfortunately it is absolutely loads of foods I like. Not much left to eat. I bought DAO pills, my they are expensive.

@@helenndow1101 fortunately, I do not have a problem with local beef, mostly grass fed, locally butchered, hung and frozen. I eat primarily ketovore , including eggs, all fresh cooked and not leftover, and young dairy, some nuts and seeds, a few vegs. My treats are a bit of stevia sweetened chocolate chips and almond flour baked goods. I use DAO when not certain and antihistamines for reactions.

Histamine is a vasodilator. (It makes your blood vessel’s bigger.) This is a normal response to certain triggers but if you have too much in the body all the time this can have effects on your heart rate, heart health, and blood pressure.

The flesh is high in histamine. Bromelain is actually in the core of the pineapple which many people dont eat. Also, idk how many u'll have to eat to get a therapeutic dose. One item can contain a variety of compounds. Bromelain breaks down protein which helps break down inflammatory compounds and reduce inflammation. But i dont think it can break down histamine.

tried some frozen salmon again after some month of abstinence... day 4 and i still feel shitty and wake up about 10 times per night, fml :D I was symptom free for many month before trying this.

The doctor did say that there can be a couple of causes and if you could cure those, it would cure histamine intolerance. In my case I am genetically programmed for low DAO production, which is incurable.

Remove trigger foods and take quercetin could also help (natural antihistamine).

Mimi - Sorry you had to go through all that! If only dentists were more aware of the multitude of health issues caused by dental infections! My digestive problems (caused by histamine intolerance) started a few months before a tooth abscess developed. Also, do some research on "copper dysregulation", which has been linked to histamine intolerance. Recent knowledge is showing that what used to be called "copper toxicity" is really an inability to properly move copper into cells, so it remains unbound.

Mimi - From what you shared about this dentist -leaving broken fragments of extracted teeth in your jaw, and failing to use basic precautions like and oral dam AND also also equipment to pull the mercury contaminated air away during the procedure...and all 7 or so fillings should probably not have been removed at once... I would not take a dead dog to that dentist.

Thank you, Carri, for reminding us that 'health begins in the mouth'. Sadly, so many of us were raised on such a poor diet, that our teeth, and often our jaws, failed to develop properly. Lifelong consumption of starchy and sugary foods and beverages, along with a lack of fat soluable vitamins, and so many other important nutrients missing in processed foods, also leads to cavities and other problems.

I do not know. But I do know that humans were not designed to drink that stuff. Mercoal.com has several articles on concerns around fluoridated and chlorinated water, with references. And tips on what you can do to minimize your exposure.

@@Jefferdaughter Actually, fluorine is found naturally in water in many parts of the world. Years ago it was discovered that people who drank that water had fewer cavities so they went ahead and started adding it to municipal water supplies. Not sure that's a good idea, but don't know for sure.

RandomPower I was in bed for almost 8 years with severe belly pain weakness, hives, migraines....my doctor told me about the anti histamine diet. I am on it now. I’ve been out of bed ever since the second week of the diet around 2.5 years ago. Praise YHVH for getting me that piece of the puzzle to my health. ✝️✝️✝️. Sorry you think it’s pseudoscience
