I just canned the recipe, eggplant and red pepper puttanesca, from that book, delicious, red wine, veggies, capers, what's not to love. I also canned tomato sauce and used. Mrs, Wagers seasoning, you were right pure awesomeness. This is my 2nd and 3rd time canning, love it!

I finally received mine. I was able to have sneak peak & tried a few recipes from their new canning cookbook. I saw the canning magazine, bought it, & tried some recipes out . . . I have tried the~Brown Sugar-Cured Canadian Bacon . . . Beef Bone Broth . . . & French Onion Soup~. . . So many recipes in it! Check it out. I have so many things marked in it to put up & can this season! My husband is already drooling in anticipation of all of the homemade goodness to come! I would tell anyone who cans, to definitely to go buy this new canning cookbook! Excellent review Linda! Keep your cooking & canning videos a coming girl! I love watching them . . . besides that I love your channel here!

I too can taste the metal from canned goods. Thank you for your videos they inspire me to do more of my own canning. I just bought some jars now what to can? Unfortunately I have to many construction jobs on the Farm this year so I don't think I will do much of a garden. But my friends at the local farm market grow all kinds of great non GMO, non Insecticide, veggies. So I will have lots to work with this summer.

this new book really reminds me a lot of Laena McCarthys book Jam On.....she is the owner of Anarchy in a Jar and her jams are spectacular. Focused on unique blends....using low sugar and her use of honey. Ball seems to finally be catching on and its so good to see. Still disappointed in their pressure canning section.....always seems to be their smallest section when in reality to me it should be the largest. Maybe one day.

That is disappointing to know I just ordered this book! I need more pressure canning recipe's!! yet again not everyone wants thousands of jelly recipes!!! maybe one of us will make our own!!!

+Ozark Off Grid Family hahahaha i agree! its why i love the amish canning book so much. lots of basic pressure canning in it. it is odd to me that of all the canning books....this area seems to be the weakest in these major canning books.

I ordered this book last week! I opted for the physical book verses the Kindle edition because..... If we were to lose Internet service for some reason or even electrical power and could not charge our Kindle device we would not be able to use the book. So all homesteading, canning,survival books I want on my book shelf. If that makes any sense.... I loved this review and I love your passion for home canning!

Had just ordered that from Amazon the other day and was reminded how when I began canning in the 60's I took the County Extension canning classes because the library was always out of the Ball canning book.

just got mine this weekend and my first recipe is enchilada sauce for the same reason, the price at the store is nuts and has a metallic taste. after that onion jam. My husband was surprised at how excited I got when he brought in the mail....LOL

Hi Linda, Since I started watching your videos I have decided to buy a canner. I have never canned before but you make me want to stat this year. I might have a couple questions for you. Would the pint jars or pint and a half jars be better for two people? It just the wife and I at home now.Frist up for caning will be your Pork and Beans, The Strawberry Rhubarb pie filling, then hamburger and a variety of beans. It will be an enjoyable summer for me.

I have about five high bush blueberry bushes. How many blueberries does the recipe call for. I usually get an ice cream bucket full from each bush.

I'm not sure because it's my recipe not from the book and I canned it up in January. I use it as a base for pork carnitas, tamales and chili verde. I think I will try their recipe and compare. My recipe calls for all the ingredients to get fire roasted first, then simmered with a bottle of good mexican beer. Then run through the food processor and then the cilantro and lime juice is added right before canning.

The Blueberry Lemon jam sounds wonderful. I made a blueberry orange jam a couple of years ago. I was a big hit when I gave some away as Christmas gifts. I'm excited about the new recipes too, but I found it interesting they call for fresh lemon juice in some of the water bath recipes. I'm so used to hearing "use bottled lemon juice only". I haven't read it yet, just looked through it. So maybe it explains.

I got so tickled when I saw this, I ordered it. Is that soooo wrong? 😍 I've got a collection of cookbooks and canning books, three of which are handwritten from back in the 1800's. On Noreen's spice blends, I have even labeled then "Noreen's Fajaita Blend" (exp) Lol. 😂 On the recipes I got from you (beef in wine sauce, onion-mushroom soup, etc) are labeled "Linda's". Lol, it just helps when I want to can more or need to know exact ingredients I used. I get so excited when I see a new canning/recipe from one of you many you tubers.

Hello Ms. Linda.. I have a question for you. I've been watching a fellow canner that lives in a 10# pressure area. He pressure cans at 15#s because he knows that bacteria is killed at 240 degrees. I live in a 10# area but was wondering if by going by 15# pressure and the time, would it over cook the product being canned. If not I would want to can at 15#s to make sure the nasties are killed. You always say to go by the ball book but if 10#s doesn't get to 240 like 15#'s at 240 heat I would want to can at 15#s too. Thank you as I'm very new to pressure canning. Years ago I water bathed but never pressure canned.

Ball really missed the ball when they did not ensure to use time tested approved recipes in their canning recipe book, and instead listed recipes which called for using fresh lemons and fresh limes. Everyone knows only bottled juices of lemons and limes must be used, as their acidity level is always constant and correct. Waiting for Ball and other fresh preserving web sites to address this per 2leelou'preserves warning and information about the above. I read on her youtube web site. I always check recipes and never use anything but bottled lemon and lime juices because it is best to remain safe at all times when water bath or pressure canning.

ravenblackhawke Fresh lemon juice was used in this book in recipes that didn't depend on the lemon juice for acidity. It was added for flavor only. Ball tests their recipes in a lab with professional food engineers and food scientists. They know what they're doing. You can trust this book for the latest in safe food preserving methods.

I live in Australia, I cannot buy an AAC the cost and dollar difference would make it around $1500, and postage, we are discriminated here in Australia 😱😭

I agree. I'm another Aussie canner. It really sucks how much we pay for supplies here. I'm so jealous of the Americans sometimes for product availability!!! I found out that there are a couple of places here where you can get the AAC for NOT a years wages!! $450 I think for the 921. Check out New Generation Preserving Australia. I've heard that they will talk to you about how to get the most out of your postage costs too buy filling the canner with jars etc. Also check out OzFarmer. $180 for a Presto. I haven't taken the plunge into a pressure canner yet, but hopefully soon.

+Shari Mason I bought my presto canner from Ozzie farmers but they don't have the AAC, I buy my jars online from them also, I have to buy $130 at a time or I have to par $30 delivery 😱 canning is very expensive in Australia😱 but I'm so addicted lols
