Appam is God's own country's revered food and most popular among Kerala breakfast recipes that are healthy and easy to make. These white lacy pancakes have a crisp side with an airy, soft on touch, fluffy center. Appam recipe uses minimal ingredients, simple to make and usually served with a range of sides like vegetable stew or chicken stew,
sweetened coconut milk, Kerala egg cury, egg roast, korma, chutney and kadala curry.

Ingredients
1 cup coconut grated fresh
2 grams dry yeast
1 tbsp oil
2 cup Rice
2 tsp sugar
little water
Directions:
Soak rice for 6hrs then blend in the blender by adding grated coconut, sugar to a fine paste.
take warm water add dry yeast and mix well then add to the batter and keep it for over night.
One the batter is fermanted take appam tawa rub oil and pour the batter and rotate and cover with the lid once it is done remove.
repeat the same.

Excellent presentation. A little desi toddy ( making from coconut tree or palm tree) is very good alternative for fermentation process.

hi chef I've tried many of your recipes , in all of that I succeeded, thanks a lot. but u see when i'm making appam i never use yeast.

I use just a tablespoon of wheat-based sourdough in idli/dosa batter and I get great foamy fermentation overnight - thin it a bit the next day with some coconut milk and voila, delicious appam!

INSTEAD OF YEAST WE ADD COCONUT TODDY. It has got a very special flavour and make the appam softy and tasty. Beef stew/fish moilee or veg. moilee is the combination

Add coconut water for fermentation.. that gives a very tasty appam.. u can store coconut water with a bit sugar in fridge. the result will be damn good. and the best combination for appam is stew.

I used to have these at my favorite watering hole along with spicy pork sorpotel/ vindaloo along with pints of cold beer on the side ... aaaahhhh ... Heaven! ... before the place shut down and opened up elsewhere... but then closed again after a couple of years.

the center portion should b like a lttl risen up nd round crispy,it goes lvly with an egg broken in d center.speciality is with iron appam shatty.

Hai sir, when I keep the batter to ferment, there is a layer of water on top and the thick flour paste on button. And my appam turns out rubbery.. How to overcome this?

Love your recipes. When I was very young in Trichy , the cook made appum on Sunday.He used a round bottomed earthenware bowl or chatti. when the appum is poured in, because it is round bottomed, it is thicker in the middle so whien i cooked , it crispy at the edges. Totally yum. I noticed yours were flat or at least the same thickness all over. Is this particular to Kerala? as Trichy of course is in Tamil Naidu I use a Wok to get the same effect......errrr not very Indian
