Despite its unusual name, this pie is delicious! I chose to make my crust from scratch but to make it even easier, you can just use a pre-made pie crust. Harold and I loved it!

Im from Arkansas, The intent is to play a trick on people. You decorate the top to look like a common pie like pumpkin pie or sweet potato pie, but underneath, it's totally different and not expected. The pie is "playing possum." Traditionally, it also has chocolate shavings on the top. Possum Pie is the official state pie of Arkansas and rarely seen outside of the state.

What a great recipe. I love that you use a hand mixer. I spent a lot of money on a Kitchen Aid stand mixer only to have it a few years and find that it was grating tiny metal shards into my batters. I now use my hand mixer and have peace of mind!

I had to laugh at the name of this pie! Many yrs ago, we were discussing, at work, Thxgiving dishes. I said I was fixing "Pa Some Dressing". A co-worker exclaimed, "Possum Dressing"! Now & forever known as "Possum Dressing" to all! 🤣

I definitely liked that you speed up the process by using a graham crust instead of the pecan one. Also, it saves time by using the chocolate and vanilla pudding boxes to create that layer. I will try it this Thanksgiving day. Thanks.

Instead of jello i use cocoa powder, corn starch, powder sugar, and vanilla extract. Also if you dont want to buy graham cracker crust. Flour,brown sugar and crushed pecans, and some butter.
