Sinnoh was so bad because Tobias just shows up at the Pokemon League but in reality, there was no way he wouldn't have been talked about all throughout the region if he was soloing gyms with a legendary Pokemon. Kalos did the opposite I think, instead of having it come out of nowhere they built up to Ash-Greninja and worked that as the way Ash would lose because it put him in a narrative trap.

In fact, they can be compared to IRL Championships, only even harder due to not being limited by the game mechanics and requiring actual care for the Pokemon. Since Ash has enough skill to constantly qualify for them, participate in them and often get high places... he is a pretty skilled trainer at that.

In Kalos it was a natural progression. His Pikachu and team shined each with their individual attributes altogether, Pikachu got the spotlight for quite a long time, and then they brought in the fight we were waiting for, Mega Charizard X VS Ash-Greninja, the only Pokémon with the phenomena that occurs every so years, and that took a whole arc for Ash to fully understand instead of learning it for just one random episode. Everything FELT like it was meant to be and quite honestly it should've. But as we all know, Ash needs to go type disadvantage to win. Every time. This battle is no different, Ash was at a disadvantage, but as soon as he does, he will lose. I can tell you that right now. But I guess the fact he has unevolved Pokémon works? Idk

In Kalos Ash worked very hard to be where he was and quite honestly, with all seriousness, I didn't think he was dumb in XYZ. He knew what he was doing all the time. While under pressure he would grin and the others would wonder what kind of plan he got under his belt. The Gym Battles for the bug gym, fighting gym and ESPECIALLY the rock gym were the first time I ever felt goosebumps about the anime. Sun & Moon is too "hahas" and "lols" in battles and I don't like it. It does work OUT of battles, that makes the plot interesting. But Rowlet sleeping in the battle? That's a not-so-funny haha moment.

I felt Sinnoh was worse to be honest. At least with Kalos they gave him a rival that wasn't a complete hack like in generation 4. they were so lazy they needed to make a legendary pokemon trainer just to make him lose.

First season wasn't really accurate to the games after all, Sleep is an Status Effect after all, and you can still figth with a Pokemon that doesn't really obey you if you doesn't have any badges. (But that is really complex for a realistic Pokemon battle after all)

This was an issue long before Sun and Moon. Look at the difference between the Sinnoh Pokemon League and Episode 2 of Black and White. Pikachu goes from tanking legendaries to losing to a level 5 Snivy.

I stopped watching during x/y because of this "10 year old audience" mentality

It's not just that, it's just the writing for the show as a whole. I know people don't like 4Kids and it's known for its many hilariously bad censors, you can say that despite that, the writing was probably one of the best as far as making the characters engaging and full of life as well as having a memorable and blood-pumping soundtrack. The problem is that the anime has devolved so much so that it makes it harder for older people to watch it.

Sun/Moon is kinda like a childish region tbh like the alola form of some pokemon kinda looks like they have come from a coloring book for kids in kindergarten

As a kid I always liked that he didn't care which Pokemon were objectively "good" and just tried to let his Pokemon shine as they are. While that's still an interesting potential, the way he continuously loses anyway has just made it overstay its welcome and prove it doesn't freaking work, outside of lucky gimmicks once in a while. (Pikachu vs. Surge still remains the only episode that actually had logic behind staying unevolved.) I'll still never understand how his Pokemon don't evolve in the first place after entire seasons of fighting. At this point, evolving in the anime just seems like a conscious choice rather than an experience and hard work thing.

If Ash didn't lose against Tobias in the first round, he would lose in the finals, it's the same outcome because Ash chooses to use weak Pokémon and doesn't even use them strategically (like having a Toracat go against the Decidueye instead of the fucking Rowlet)
