Baba Ghanoush is a delicious dip made from roasted eggplants. It's a fresh, light and colourful addition to the mezzeh platter. Moutabal is also made from roasted eggplants, but this dip is creamier and packed with smokey flavours.
Since I have a Middle Eastern background, I've been serving Baba Ghanoush and Moutabal for years. So here’s an insider tip: if you like hummus, you will also enjoy these two dips!

2 oven baked eggplants
4 tbsp of tahini
4 tbsp of greek yogurt
1 lemon juice
2 garlic cloves crushed
1/2 tsp salt
Olive oil

Pomegranate seeds/ chopped parsley/ sumak
Baba ghanoush
2 oven baked eggplants
120 g chopped tomatoes
100 g chopped green paprika
100 g chopped yellow paprika
100 g chopped red paprika
40 g chopped onion
20 g chopped parsley
OPTIONAL GARNISHES
Pomegranate seeds/ chopped parsley/
pomegranate molasses
