No Middle Eastern mezze spread is complete without baba ganoush. Here, chef Reem Assil prepares the classic, smoky eggplant dip two ways-the traditional Arab dish, as well as the newer American version.
Assil, the founder of Reem's California restaurants in San Francisco and Oakland, promises this healthy, easy-to-make dish doubles as both an indulgent snack and an impressive appetizer dish at dinner parties.

I just made the chunky style baba ganoush salad from this video and it was so crazy good. Had it with warm fresh pita, and grilled kaftas. It made for a memorable Sunday evening meal.

Excellent recipe which reminds me of my first visit to Beirut Lebanon where I discovered the amazing Arabic -Middle Eastern gastronomy not well known in Norway. Was that a revelation? Absolutely. I love your food, it’s one of the best and most flavorful in the world! Thank you

Oh, that looks so good. Smokey roasting of the eggplant is way to go. I like spicy as well. Indian market is 1 1/2 blocks form my home. A new tool was added to my kitchen called a food mill. Sure some uses for it can be found. It is great for separating skins/seeds holding back some of the bitter components.

Thank you, olive oil is bad for health but I know as a chef you care your people like things, you don't care if they have bypass l at 60 or cancer at 40. The more olive oil the better taste, more votes you"f say.... But salt is really too much. Just 2 cent worth of my opinion.

Olive oil most definitely is not bad for your health. Processed oils, especially seed oils, are bad for your health. Always use animal fats, butters, avacado oil, coconut oil, and olive oils. Stay away from synthetic oils and seed oils such as corn, canola, grapeseed, and sunflower seed oils.
