Bacon Brown Sugar Ribs Smoked On The Weber Kettle

Pork on pork. I had to find out if it would work, so that meant one thing--I'd be putting my Bacon Brown Sugar Rub on a rack of St. Louis cut spareribs and smoking them on the Weber Kettle using some peach wood. A quick glaze with some BBQ sauce finished them off and the end result was nothing short of pork heaven.

As someone just getting familiar with the hobby, today I cooked my first rack of pork ribs using your method and it was a huge success. Living in Hungary but visiting the US on business occasionally, I was glad I had the chance to introduce the authentic taste of low and slow BBQ to my family and friends here at home and now they are hooked. The detailed instructions, especially on setting up the kettle helped me tremendously. Thank you Ry!

Do yu have any sort of baffle plates in the cook chamber? They help distribute the heat more evenly. Also, was there liquid in the wrap with the sugar? I've never had any issues with burning.

Small tip for glazing if your ribs are already "DONE!" and you dont want them to be over-tendered and fall off the bones Pull them off and let them rest. If youve got the time of course- Pull them off and let them rest for a good 30-60 minutes. Then stick them back on and set the glaze. This way you wont over-heat the ribs and can maintain the texture you want. Cheers! (Also- I like to use a meat probe with mine. Im watching for 202-204, once i hit that temp theyre typically RIGHT at the tenderness I want. Soft, but with a bit of bite. I dont like "mushy" ribs, personally. Once ive wrapped the ribs, ill let them tender up for about an hour then check the temp every 15-20~ minutes depending on how close they are with the first check)
