Good to know the differences. As I understand Eno is the healthiest but can be used only for specific dishes. It would be good to know where we can use Eno and where not to. Also where we can substitute baking soda with powder. But overall a great learning video.

Mami - I was so naive or stupid to think these 3 are interchangeable - thanks for clarifying - great chemistry class - :) BTW, I thought only relationship requires understanding chemistry and the reactions between the 2, now, I understand even cooking is chemistry and the reactions between the things - right combinations of right things yields the desired reaction giving brith to great tasting food similar to right combination of people results in great chemistry with the very tasteful reactions and gives birth to great offsprings :)
Very well explained madam. In some recipes baking powder/baking soda is mixed with oil to slow down its reaction. I wished you would have explained that too.

So mam i have two question. 1.Can we substitite baking soda with eno n vice versa? 2.What will happen if we use only baking powder without baking soda in cakes?
Why we cannot use baking soda in cakes? Is it because lemon/vinegar/Curd will make it sour? Can we use eno in cakes? For recipes with eno we don't need to add lemon/acid? But for recipes with baking soda, an acid is must?

Well explained Mam... But still I hv a doubt.. What is the proportion of baking soda n cytric acid (lemon juice/vinegar /lemon flower) in place of Eno?.. Here in bracket I hv added lemon flower as one of the cytric elements.. Will lemon flower give the same effect like lemon juice or vinegar?
