Before I went vegan I used to work at a restaurant that had a BBQ brisket sweet potato on the menu and it was amazing. I recreated it but vegan using jackfruit. It was similar to this but it was topped with red cabbage, sour cream (I used vegan of course), and green onions and it was perfect!
We can't get these nice mushrooms here in Mid Wales! So I'm going to try this with some regular shrooms or some portobello shrooms (if they have them!)
