Ingredients:
1-Pork tenderloin
1/4cup-salt
1/4cup-sugar in the raw
1/4cup-brown sugar
1Tbs-chili powder
1Tbs-paprika
1Tbs-black pepper
1Tsp-Cayenne pepper
Spray avocado oil
Method:
Begin by making a simple BBQ rub, combine all ingredients in a bowl and mix thoroughly to combine. This recipe does make a decent amount of rub and can be stored in an airtight container.
Rinse pork tenderloin and pat dry with a paper towel. Once dry spray a small amount of avocado oil on tenderloin and rub to coat tenderloin. Next spread out some rub on a baking pan and roll the oiled tenderloin in the rub. Take time to coat the tenderloin with rub completely and then discard leftover rub on tray. Place tenderloin on a plate, cover with plastic and refrigerate for 2 to 6 hours.
Preheat your grill or smoker to direct heat at around 400° It’s important to get a HOT grill with a low flame, because the rub is mostly sugar and sugar burns quickly!
It’s now time to grill your tenderloin, place meat on grill over hot coals, remember the rub burns easily and a tenderloin is only around a pound of meat. With that being said, stay on top of things, try to keep the lid closed to avoid flame ups and don’t forget to flip and maybe even move the tenderloin around on grill to avoid burning or charring. Cook until it reaches an internal temperature around 150 to 155° depending on your preference.
Once at temperature, remove from grill to a plate and brush with your favorite BBQ sauce. I would go for a sweeter sauce to complement the spicy rub. Tent with foil and allow to rest for 5-10 minutes before slicing. To serve slice tenderloin, then drizzle more sauce over top and enjoy!
