The potato candy reminds me of potato crepes. They're really really good, because the potatoes don't end up keeping their taste when cooked a certain way. So they just taste neutral, and you can out whatever you want on them

I grew up with Shoo Fly Pie - my family is Pennsylvania Dutch - and I love it. It is very molassesy 😀so I use dark Karo Syrup instead. It gives it a lighter flavor.

My mom used to make that cottage cheese jello salad for Thanksgiving/Xmas, though without the cool whip. Though she mixed the pineapple and cottage cheese to properly-made Jello, not just mixed the powder right into the mix.

Insofar as the Chipped Beef goes, you can always work around the canned beef. you can get ground beef, and prepare it in thr same manner as sausage gravy, and get a better result. I know they make it that way in parts of Mississippi.
