@@Exhalted1no it doesn’t become black. Watch a few Indian cooking videos and you’ll see what he’s saying is correct. You always add curry leaves to the oil first to infuse the flavor before you add the remaining ingredients
the ones on the plate are scrunched up, which makes it look thick. You can see it's true thickness by the piece he was eating with, looked pretty thin.

This is like the only time ive seen a vid from him wheres its low and slow haha. usually hes like "wok on maximum heat" and the dish looks like it comes together in 5 minutes. That shit looks extremely fire tho

@@stephin1612I dont want to go there bcz I already knew that. It is originated from india but roti canai ( in the video ) is modified by indian muslim ( mamak ) in Malaysia and now being enjoyed by all races in Malaysia.
It's not. Very similar but not the same. Kerala roti is typically pressed by hand or rolled with a rolling pin. Malaysian style roti is based on that, but has an additional flipping step where a small little roti is stretched into a thin film and then folded in again. End result is slightly different in terms of texture, but very similar in taste.
@tonylam4549 hey we rarely use the rolling pin for porotto we usually make a thin film using the dough,cut it and will roll it like a wheel a lot of oil is added so there will be a lot of layers and then we press it with our hand and then toast it on a tawa

For starters, this is a Malaysian dish not Indian. So it is called beef Curry and roti. Before you get angry it is inspired by South Asian cuisine but it is not from kerala
Imagine that this dish was cooked only when it was ordered. Customer: I will have the curry with roti Waiter: ok that will be a 2 hour wait for your food.
