Hello Mike, Good Sunday morning to ya. We were very pleased with both racks of ribs. The cheap walmart $10 ribs were as good as the $60 beef ribs from the butcher shop in flavor and tenderness. Of course much less meat, but what we cooked was enough for two meals easy and were excellent. Those are worth every penny. The pork ribs turned out great too. And you know I love those veggies. Have a great week.

Your pork ribs looked delicious. Personally, I like the whole spare rib. I’ve always passed over those beef ribs in the store because they never look like there is much meat on them. I was surprised when you cut in to them… there is enough to make the effort worthwhile… and you already had the fire going! Thanks for taking the gamble for the rest of us. Now I’m going to have to get me some… 😉

Well, I’m leaving a comment so you never get anything done hah. Those beef ribs look real good and not a bad deal at all. I always do spares and normally trim em down to St. Louis cut, cook up the riblets but boy they do cook quick. Other thing you can do is cook em up in some foil with veggies and a splash of broth, good stuff too. Hope y’all have a great week!
@progers5019
@progers5019 4 года назад
Yea Charley, I get busy and forget about the trimmings. Guess I need to St Luey them. I do know they will slice better if I do. When you leave them uncut they are so long and with the cartilege in that section, after being cooked done they tend to slit apart. Even with the slicer, they tore apart. I ended up just pushing the knife straight down and not pulling it to get them cut up. Thanks for the tips good buddy. Have a great week.

Hello Randy. I appreciate your comments. Sometimes I wonder if I've had enough then I get some great comments like this one. I'm glad to hear you and the wife sing. I came from a singing family myself. Mom & Dad had all six of us kids up singing all over the place as The Rogers Family when we were growing up even into young adults. Then everyone got married and went in different directions. My singing sorta dwindled into choir groups and then to nothing over the years. My oldest brother made a career of professional singing in groups and solo work. We lost him a couple years ago so he has graduated this old world. Anyway, thanks for stopping by and giving me a little encouragement. Have a great rest of your week- Phil P.S. so you've been up here in our area before. That's great. Let me know next time you come up 95 to sing.

Hey Mike. Well anybody that is from a place called Rual Hall (emphasis on Rual) should know all about Purple Martins and gourds. lol. It's just another small hobby I got into about 10-12 yrs ago (on a small scale). I spotted a couple sitting on the umbrella racks yesterday. Nothing today. I'm trying something different this year with the entrance size. Went with the SREH opening. Starling resistant entrance hole. Kinda like a crescent moon shape to keep the larger starling out. Gotta get them use to the change. I let them down to adjust the hole again yesterday. By next year I hope to spend a little money on a new rig and new type gourds. Thanks-Phil

Thanks Kent. Sometimes it's fun to get a deal. Beef ribs are generally high and the average family stays away, even many restaurants and other outlets. This is a win/win. They get to get rid of the scraps (so called) and we get to enjoy. I like the Amazon Basics tri-pod. The only dink is that a couple of the clamps came unglued. Had to try and reglue them. Other than that works great. Not as big and bulky as some.

@progers5019
@progers5019 4 года назад
I can't say yet because I only used the SNS with steaks so far. Of course I have cooked plenty on the kettle. Both of these were so tender though and were excellent. I will say that the kamado style has intrigued me since I've never owned or used one til now. I absolutely love it. Most backyard pitmasters in most of the country are lookin for smoke, but remember we didn't grow up eating smoked meat, so we are plumb tickled about the meat this kamado turns out without being oversmoked. That's the biggest reason we use it kamado style. I see that you finally got one to add to your cooker arsenal. You should be an ole pro with kamado cooking for sure. Thanks Justin

Awesome bones Phil!! I always look at those Walmart beef ribs and maybe now I might just have to buy a couple racks! Thanks for sharing bro and yes I like jerky! Haha 😂 nice bro!!

hahaha, I never get those trimmings right. Always jerky. A while back, I saw Larry over at the Wolfpit do some of these and say how good they were, so I figured I'd try them. This is actually the second time and was better than the first. Ken over HMB has done these too. This batch turned out really good. Thanks Jeff. Have a great week.

Hey Phil, it's been a while since I've cooked whole spares I usually just find the St Louis cut. That looked right tasty. You know I bet those beef bones would make some good smoked beef broth? What do you think. Good for brisket chili.
@progers5019
@progers5019 4 года назад
Yep, I think you're right. I need to start trimming the spares to St Kuey, cas they just don't slice up good for show when left whole. That line of cartilage always breaks apart. LOL Thanks Mike.

Hey Phil! It's funny, no matter what I'm at Walmart for, I always stop and look at those beef ribs hoping to find a nice meaty one. Looks like You found a good one.......but they still shrink up a lot. Those beef ribs turned out melt in your mouth tender......they needed that high heat to get them to that point. But the pork.......maybe only half the time in the wrap? Sweet and spicy with the PIF sauce for some tasty Ribs! 👍 You had a wrestling match going on with that paper and the wind, but You won! The Veggies looked Terrific! 👍 to Janet! Who don't Love a little Jerky? :-) LLLLL.

haha, that was a test to see who endured to the end. You did. lol Yea, I've seen you do these maybe a couple times. These were really great, tender and very flavorful. I'd throw $10 down anytime for some like those. Yea, when you don't St Louis the spares, they are so long/wide, plus the grissle break, it's hard to slice them and keep them together. If you want to show them off, you need to St Luey them. They didn't stay in the butcher paper but 50 minutes. They sho did tender down though. The veggies were good too. Looks like leftovers for dinner tonight. Have a great week buddyro.

Looks like a tasty dinner. Jealous of the green yard. We got 5 1/2” of snow Tuesday. Have you done anything with that huge ham?
@progers5019
@progers5019 4 года назад
Hello there snowbird. I'm glad it's you and not me with the snow. lol That big ole ham time in the spotlight is coming up March 21. We are having a big family get together and I'll be decorating it all up and resmoking it. I know it will be good, so be looking for that one. Go ahead and make plenty of chili and hot chocolate and hunker down. Springtime is coming. We've already had Bradford Pear trees blooming and a little fuzz of pollen on the glass table on the patio. 78 degrees one or two days, then highs of 50. Won't make it's mind up. Oh and rain every week.

How did you all season and cook the veggies?
@progers5019
@progers5019 4 года назад
I used olive oil on everything, then added some SPG and a little sprinkling of garlic salt with Ranch seasoning that's been in the cabinet a long time. Trying to use it up. lol I had intentions of cooking them on the cooker like usual, but in my hurry they were baked in the counter oven which did a great job.

Phil, have a WSM I believe. I was wondering if you put gasket on the mid section where the lid sits, on the bottom section where the center section sits and around the door? If so what did you use? I went to Amazon and they have all kinds. They have self stick and the kind you need glue what would be your recommendation for my WSM 18”? Thank you.
@progers5019
@progers5019 4 года назад
I went a long time without gasket, but last summer I ordered some and installed between the lid and mid, and around the stainless steel door. I answered someone before about this. Let me see if I can find it and copy to this post.

Came from LAVALOCK. Part # LL12 1/2" X 1/8" X 15' - Hi Temp adhesive white. Perfect for the lid and door. Didn't put any on bottom section. Not needed IMO. www.amazon.com/Lavalock-Nomex-gasket-smoker-stick/dp/B00JO00S04 Here is another site cheaper. Not sure how much shipping is. www.conghestore.com/grey-lavalock%E2%AE-gasket-high-temp-bbq-smoker-grill-nomex-self-stick-12-x-18-x-15-p-863931.htm

Doesn’t the brown sugar make it awfully sweet?
@progers5019
@progers5019 4 года назад
Well, not awfully sweet, just sweet. LOL The heat has a way of equalizing the honey, brown sugar, and butter. Then also sets the sauce. Sounds like something you should try. Do one with and one without and judge. Thanks for watching and commenting.

Phil N Florence Phil, the reason I asked is being type 2 diabetic and take insulin, I kind of watch my sugar intake somewhat. Wasn’t trying to be critical just concerned. Thanks for answering.
