How about some ricotta salada instead of the mitzithra cheese? That I can get here. My Italian store also sells a Greek ricotta salada, which is the one I usually buy. And now I’m wondering if it’s actually Mitzithra 🥴
My brother in law is from crete and certainly does not consume anything close to the amount of salt/oil you use. Everything you make looks great but every single recipe has way too much salt/oil. Having high blood pressure would kill me if I followed your recipes. Other than your excessive salt and oil, all looks good.
The best thing about cooking is customizing it to suit your taste. Feel free to use less salt and less oil. My family in crete uses more olive oil than I do. They have so much of it. Maybe that's why... All the best!
Maureen, clearly you need to educate yourself about the health benefits of olive oil, as well as the important differences between a teaspoon of "table salt" vs a teaspoon of kosher or sea salt.
