Is this a Hamilton Beach bread maker malfunction or a user/ ingredient error?

Needs more liquid! Make sure when it's kneading that it forms into a single loaf. Add water a tablespoon at a time till it comes together. Mine looked exactly like yours.
@dlane7539
@dlane7539 Год назад
You need to put your liquid in, then flour & sprinkle the dry yeast on top. That way your yeast doesn't activate too early. Use milk (Luke warm) instead of water for best bread. Also the weather and the altitude can make your breads fail. Humidity in air can make it not rise correctly as a draft in your kitchen can alter it too. Consistency is best in bread making.

It looks like the flour is compacted into the cups, which would make the dough dry. If you don't measure by weight, you definitely have to watch it to make sure the dough is not too wet or dry.

If it tastes good it doesn't matter what it looks like. I love baking. 7-up biscuits are my family's favorite.
@ferrarim5p75
@ferrarim5p75 10 месяцев назад
6 possible reasons, from the most likely to the least: 1. You have over-compacted your flour in your cup and had thus used too much. Always measure flour by weight. 2. You had used 4 cups of flour which is already too much before even considering the point above. 3. Your yeast has died, expired, gone to meet its maker. If in doubt, proof the yeast in some of the water for some 10 min. If it's still good then you can put the mix into the breadmaker. 4. There is a fault in the breadmaker and it does not warm the dough during the mixing or proofing stages. Use warm water and warm flour to alleviate this issue. 5. Perhaps it doesn't even bake it at the right temperature. Thermostat problem? 6. You have used plain flour or worse, used cake flour. Normally, you'd need the higher protein content (12 - 13%) of bread flour to make it rise well.

I had the same issue and found it was the flour. When I switched to another bag, purchased at another time, it worked as it should.

I have the same bread maker and I’m wondering what you put in there on top of the yeast. I’ve always been of the mind that nothing should touch the yeast other than flour until everything is kneaded together. That’s because salt, for instance, can deactivate the yeast, etc.

I've had great luck with no knead bread and baking it in a loaf pan or a dutch oven. The key is to use known good yeast and give it time to work. Like 24 hour ferments. I like SAF yeast or Caputo.

Be sure that you spoon your flour into your measuring cups. Put the ingredients into the bread machine in the indicated order. When putting the yeast in, make a well in you flour then pour it. Check on the dough for consistency and add water or flour as needed.

The last time you made bread what was the day like was it colder in the house or was it sitting in spot that it was colder then normal . Machine can react to the cold and stop doing there thing . Make sure under the pan is clean.check all moving parts. If the area is not warm enough the yeast will not rise the right way.

Make a small pocket in the flour then put the yeast in that pocket. Yeast should not touch any of the liquid or salt directly as this will kill the yeast. If using active yeast and you just opened it, add a bit extra since it takes time for the yeast to activate once opened the first time.

I had this happen, (but caught the mess before the bake step, by doing 'dough' only), & it looks to me like it was an issue with older bread flour & only 1.5 tsp yeast, when 2.5 was better. (We have record heat today, + high humidity, but it is still the case, that when I add a different flour/ more yeast, that is what fixed it, as described). I followed a recipe to the T. I had made the bread according to everything I read in all these comment suggestions, so none of these other suggestions gave the fix. My bread was a sticky mess half way through the dough only stage. So I turned it off. My recipe used bread flour, & oat bran. I added another whole 1/4 c of oat bran, doubling the recipe amount, it was still sticky. I began adding several tbsp of whole wheat white flour, 1 at a time, mixing by hand, & added another 1 tsp yeast. Wow. It's perfect now, & massive rising, to the top of the pan. I'm deflating, putting it in the frig overnight, & going to bed. Bread tomorrow, yeah

I have 3 years old yeast that I kept in the fridge and it is good as a newly opened pack of yeast. This is my first time using a bread machine that my friend hand me down without a manual. I watched youtube videos so that I can have an idea about the measurements. It says 2 cups of flour. After the baking is done the bread is only half of the pan. Now I made 4 cups and using my own measurements of yeast, salt, sugar and oil and water, After baking I got a full pan of bread that is fluffy. I love this bread machine.

That's weird, first time using my Russell Hobbs bread maker following the recipe & measurements, I was very happy the way it turned out, I love my bread maker! Get a Russell Hobbs!!😊👍 Use a metal bowl with non compacted flour, make sure there is plenty of air going through the floor while pouring ito the tin, if remnants of dough sticks to the sides of the tin while its kneading, use a plastic spatula to incorporate it back into the main body of the dough.

Bread machines are a single purpose (use) instruments. Get yourself a multi purpose machine like a electric mixer, ( KitchenAid) and you’ll be able to mix anything like breads, cakes cookies etc…. Many recipes on RU-vid for breads ( start making some sourdough or partial whole-wheat breads)in a mixer. Doesn’t take much longer and the results are yummy 🤤

Like someone said below, it's the salt killing the yeast. Put the salt in the water on one far side and the yeast last, piled on top of the flour, on the other side, not in the water. Just think 'keep them separate'.

Try kneading until it’s all incorporated, take out the dough and let it sit for 30 min or so. If it rises that’s ok you can knead it by hand and the dough will shrink. Then shape it so it can fit back into the machine and wait about 10 to 15 min before baking.

Yes. The ingredients still might not be exact. You should get that ice smooth ball of dough. It looks like a few drops of water could have been added. Ran into the same issue when I started. It’s not an exact science. Add a little bit of flour or water while it is needing if required.

@@LaidBackLiving I switched to a slow ferment schedule. I mix mine up and let it rise for a while. Then dump it in the fridge for a long ferment. 3 days later, I pull it out and bake and make the next batch at the same time. Some is always in the pipeline. If I want to take part of the dough for pizza or something I just grab it from there. I can put it off a day if I don't get to it or I can cook it early. It makes it really easy to fit to your schedule.
