A lot of people like to actually enjoy their meals. Not only the flavors but just the excitement of enjoying a dish slowly. Taking your time and not rushing everything so you can fully enjoy the experience and flavors is key when wanting to have a good meal. The Japanese know this very well.

Beautiful fresh fish. It is quite an expensive product here and if I have fish it is usually some cheap product from a freezer. Your dish has made me determined to save up a little more for the month and get some decent fresh fish. Thankyou Chef for your video.

Hi Frances and Chef! I love your videos! Thank you for helping me to learn how to make delicious meals for myself and my friends. I have been making dashi stock with kombu kelp, like you show. However, once I've finished with the kombu for stock, it seems like I am wasting the kombu if I throw it away. Do you have any recipes or tips you could share for using the kombu after making dashi stock? Thank you very much!
*This* is what I'd really rather be eating after work right now... instead I have hummus. I am definitely saving this for my day off. It is not to difficult and looks fresh and mouth-wateringly yummy.

You may use dashi powder if bonito and kombu aren't available but we recommend finding ponzu sauce in your local market :) Just combining soy sause and sour citrus juice is also delicious :)

I understand, I had my study in EU and I found that hot pot is not popular dishes in Europe I hardly find restaurant that serve hot pot, perhaps there is one but it is so rare. You should try it, it is very good and healthy!
Probably just because it's pretty and makes it smaller and easier to eat. But also it exposes more surface area to the cooking liquid so it can absorb more flavor.
