We are making beef Shabu Shabu, a type of Japanese hotpot, with ponzu sauce and sesame sauce. We will also make delicious Zosui, Japanese porridge so you can savor the last drop of soup.
How to make Shabu Shabu

(2 people) Cook Time: 35 minutes
Soaking kombu seaweed in water is not included in cook time.
300 g Thin ​​Beef Slices (for shabu shabu) (10.58 oz)
1/2 package Shungiku Leaves
1/3 package Mizuna Greens
1 Long Green Onions (Naganegi)
2 Shiitake Mushrooms
80 g Enoki Mushrooms (2.82 oz)
40 g Dried Kuzukiri (kudzu starch noodles) (1.41 oz)
[Ponzu Sauce]
1 Lime (substitute: yuzu, sudachi, lemon or any type of sour citrus juice)
3 tbsp Soy Sauce (an equal amount of the lime juice)
100 g Daikon Radish (3.53 oz)
2 Spring Onion Leaves (also used for zosui)
[Sesame Sauce]
3 tbsp White Sesame Paste
1 tbsp Soy Sauce
2/3 tbsp Nam Pla (Fish Sauce)
1 tbsp Vinegar
1 tbsp Sugar
2 tbsp Water
1/2 Garlic Clove
[Broth]
1200 ml Water (5.07 cups)
2 pieces Dashi Kombu Seaweed (10x10cm/4"x4")
50 ml Sake (1.69 fl oz)
1 pinch Salt
[Zosui]
200 g Hot Steamed Rice (7.05 oz)
1 Egg
Salt
Soy Sauce
Spring Onion Leaves
1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml

I made this today. Could not find Mizuna and Shungiku, so I replaced it with Nappa cabbage and Pak Choy. This is the best Sesame sauce I've ever ate. I will definetly do it again!

Long time follower, made this recipe today for my father who visited Japan in the early nineties. He talked about this dish nostalgically, and was happy to try this again. Thank you for many years of sharing Japanese food and culture.

I love watching your videos. I lived in Japan for 2 years from 2004 - 2006 and I really miss it sometimes. I miss the food especially since it is so hard to find authentic Japanese cuisine outside of Japan. Keep doing what you are doing. Thanks a million!!

I love this channel. It's exactly why RU-vid is the best technological innovation of the past 10 years. You used to have to go to Japan or get special cable channels to watch this kind of thing, but now it's available for all. Excellent presentation as well. As someone who is learning Japanese, this is really helpful as i can learn what the words are for certain things when i go into an Oriental supermarket. Keep it up Dog!

I was lucky enough to have Shabu-Shabu featuring King Crab! I was invited to a Japanese home for New Year's dinner and also had Sake with gold flakes in it! Incredible meal!!!

you are completely right about which raw meat to consume. and yes pigs in Japan are raised differently then over here in America and some parts of Europe. they are not pumped with chemicals, and they are usually free to roam on the farm, they have a feed trough, but they do have the choice to eat whatever they find on the farm grounds. because they aren't given hormones or other chemicals, they rarely become sick, which leads to better pork meat!

To all the people who are complaining about the meat, I've had it before, it's not normal slices of beef. You have to get special extremely thin beef slices that cook almost immediately. It's entirely safe to eat and actually very tasty.

Mmm yeah!! We used to go to this Taiwanese place before we became veg and we used to have that all the time!! The soups would come with beef ball, fish ball, fish cakes, crab sticks, eggs, kamaboko just everything you could imagine!

It looks hard to make but I eat it at a japanese restaurant and I have to say it is the best food I have ever had. I believe the sesame seed sause makes the dish. I have told everyone that I want it as my last meal if I ever end up on death row. Yes!!! Its that good. I'm not even japanese, I'm Mexican.

Because the beef is so thinly sliced it cooks very very fast. I ate shabu shabu while I was in Japan. It's very safe and very delicious!

@auntbecky Nabe is a general term for any Japanese hot pot. The word nabe actually refers to the pot she's using in this video. Anything cooked in one of those seems to be a valid thing to call nabe.

according to the internet I need a portable stove to keep the soup warm at the dining table, unfortunately I don't have one. I do have a serving tray that keeps dishes warm by putting tea lights under it. Will that do too? I don't need a big pot, it just needs to feed 2 people.

you can usually buy it at asian / japanese supermarkets, it's meant to be used as sukiyaki or shabushabu meat when it's sliced that thin.
