I had no idea how to use the disk blades on the food processor, and I knew I couldn't shred the cabbage nicely by hand. Your video helps a ton. Thank you!

While cabbage may be easy for most people to cut by hand, I can't do that with permanent back pain issues. This saves me from a week of added back pain. Thank you!
@lindarosec
@lindarosec 6 лет назад
Tasty Worker There is such thing as permanent back pain. My dad suffers from it due to herniated disc, meaning the spongy disc between the bones that form the spine are damaged or wasted down causing permanent back pain that never goes away, not even a guaranteed with surgery, and must be on pain meds permanently only to alleviate some of the pain & discomfort this causes. There are many causes for back pain and until you walk in someone else's shoes, you don't really know what they're going through so perhaps you shouldn't jump to any conclusions and assume you know the answer to why someone is in pain.

Feed it all through again to get finer chopped cabbage or cut the chunks up into several smaller pieces first before putting into the food processor, which makes the cole slaw much easier to eat and even tastes better.

For an older version, this food processor barely makes any noise. Mine is so loud and just bought it last year. The spout on mine is narrower though, I'll have to chop the cabbage into smaller chunks. I also want smaller pieces, I think I'll use the shredder blade instead of the slicer. Thx so much for the demo 😊
@seikibrian8641
@seikibrian8641 6 лет назад
So did you try it with the shredding disk? If so, did it work for you or did you end up with cabbage pulp? I know what you mean about noise: I had an original Cuisinart in the 1970s but sold it in the '80s, and then a few years ago when I got back into cooking in a big way I bought a KitchenAid food processor since I liked their stand mixer so well. It was so noisy and so hard to clean that I got rid of it and bought a new Cuisinart DFP-14 (the 14-cup brother to the 20-cup model in this video) -- much quieter than the KA, and easier to use and to clean since the bowl design is simpler, and the large feed tube is a bonus.

experiment with chopper blade (not the grating disk - if the shredding disk/narrow shute combo is not workable

For those who don't know which blade to use, it all depends on which food processor you have. Mine has 2 blades I can use. One for medium slicing/shredding and one for small slicing/shredding. If your only has one, use that one. If you want smaller pieces run the cabbage thru again. It's not rocket science. You can also slow down the video or stop it at the point she is putting the spindle on the blade. Lastly you can read the Owner's Manual that came with your food processor:))

Not sure what the specific way was? But comparing mine to yours the shute is Wide and Large, and that you place the cabbage in sideways not as a top down wedge that i have been doing. I notice too that you selected a small cabbage, that happens to match the shute size also. How to prepare chunks from larger (normal) sized cabbages without them falling apart before processing?

That looks like a Custom 14™ 14 Cup Food Processor, as seen here: www.cuisinart.com/shopping/appliances/food_processors/dfp-14bcny This model has been chosen year after year as America's Test Kitchen's highest-rated food processor. It doesn't have a lot of bells and whistles, but it does all the jobs a food processor needs well. I had a white-plastic model back in the 80s that I gave to a friend when I bought the brushed-metal with black plastic model that's shown in the link. (I gave away a big KitchenAid adjustable slice thickness model because it was just too fussy.)

That looks like a Cuisinart DLC-XP, and yes, it's large...20 cups. It's the largest FP among "consumer" food processors as far as I know. To go larger you'd need to get a commercial model from a restaurant supply vendor. (It might be the DFP-14 14-cup model, though; it's hard to judge size without a reference of some kind for scale.)

What you called a "grating blade" is a shredding disk, and what you called a "chopping blade" is a slicing disk. The actual chopping blade is the S-shaped blade that you called a chopping blade the first time, which goes in the bottom of the bowl and is used to chop garlic, herbs, nuts, etc. There IS a grating blade available as an accessory, and it's used for grating parmesan cheese and the like.

that cabbage wasn't cut finely enough-- the slices were too long. Should have broken the cabbage into smaller pieces before processing it
@Lisa_MS64

I use the regular chopping blade for coleslaw, combining cabbage and onion in the bowl, and pulsing until desired texture. The shreds in this video would be great for stir-fry
@bigpardner
@bigpardner 6 лет назад
I agree, too long and thick; something for Chinese soup. I wonder if the force, speed, you push it through affects the thickness of the cut and if there are blades with varying depths of cut.
@seikibrian8641
@seikibrian8641 6 лет назад
+ bigpardner -- No, the pressure and feed speed don't affect the thickness of the resulting slices significantly; that's a matter of the blade opening width, which on this model is fixed. The standard slicing blade (not "chopping blade" as she wrongly called it) is 4mm, but there are accessory disks available in 2mm, 6mm, and 8mm thicknesses, as well as a 6mm X 6mm French fry disk.
@fyryred
@fyryred 4 года назад
@@seikibrian8641 great answer. I only watched this video to see if the slicing blade opening width would be mentioned. I have such an accessory set of Cuisinart disks with different blade opening widths.
@seikibrian8641
@seikibrian8641 4 года назад
@@fyryred Yes, I consider having a few accessory blades to be a must. Some brands have an adjustable slicing disk with which you can set various thicknesses before (or in some cases during) a slicing session, but the ones I've tried had other issues that have always brought me back to the Cuisinart Custom 14 as seen here. Cuisinart used to sell a storage box that could hold several disks as well as the chopping blade (the "S" blade), but it seems to be "out of stock" every time I look it up. They do offer a small, round disk holder, but I want the big box. (I lost the one I had during a move.)

That depends on how much you are making, how available the processor is, if you are going to use the processor for other tasks. How long does it take to get out the processor, use it, wash it, and put it away, compared to using a knife?
