Another adventure of Flying Dutchman & travel journalist Andreas van der Schaaf. In my TV Series "First Class Around the World" (1994-1997)I visited Key Biscayne in Florida where at Stefano's, Stefano himself prepared the Original Caesar Salad. The One and only! For all of your chefs and sous chefs to know now world wide,,this is the ONE..like Caesar Cardini used to make. He and his brother Alessandro created this world famous recipe in their hotel-restaurant in Tijuana.
Just follow Stefano and you have the original..without bacon bits, chicken and 'whole' ansjofish..nooo....this one is it ! Some write Caesar (the right ones) and others write Ceasar..anyway gazpacho is also different from carpaccio...but Caesar Salad should be like this.

Italian-American restaurateur Caesar Cardini invented the salad in 1924 in Tijuana, Mexico. Cardini owned a restaurant in the tourist destination to "attract Americans frustrated by Prohibition." The exact story is disputed, but the general consensus is that over Fourth of July weekend, Cardini threw together a bunch of ingredients he had on hand and served his concoction to his friends. The original recipe included "romaine, garlic, croutons, and Parmesan cheese, boiled eggs, olive oil and Worcestershire sauce." Supposedly Cardini's brother, Alex, came to Tijuana in 1926 and added anchovies to the salad. He called his version the "Aviator's salad." What's Cooking America says that this version was so well-received that it became the standard and was renamed the "Caesar salad." In 1953, the International Society of Epicure declared the classic salad, which by then was popular in Europe, "the greatest recipe to originate from the Americas in 50 years.

the Original Recipe did not have Anchovy. that was added later by Caesar or by someone else....as per Julia Child whom spoke at length with Caesar's daughter.

I was making this exactly this way at the Camelot Restaurant in Lake Placid FL in 1980. Tableside was always such fun, and we made great tips!

Caesar Cardini (also known as Cesare Cardini, February 24, 1896 - November 3, 1956) was an Italian Mexican American restaurateur, chef, and hotel owner who, along with his brother Alex Cardini (November 23, 1899 - December 22, 1974), is credited with creating the Caesar salad History he salad's creation is generally attributed to restaurateur Caesar Cardini, an Italian immigrant who operated restaurants in Mexico and the United States. Cardini was living in San Diego but he was also working in Tijuana where he avoided the restrictions of Prohibition. His daughter Rosa (1928-2003) recounted that her father invented the salad when a Fourth of July 1924 rush depleted the kitchen's supplies. Cardini made do with what he had, adding the dramatic flair of the table-side tossing "by the chef." A number of Cardini's staff have said that they invented the dish. Julia Child said that she had eaten a Caesar salad at Cardini's restaurant when she was a child in the 1920s.[7] In 1946, newspaper columnist Dorothy Kilgallen wrote of a Caesar containing anchovies, differing from Cardini's version: The big food rage in Hollywood-the Caesar salad-will be introduced to New Yorkers by Gilmore's Steak House. BS, cardini plagiarized a recipe from a group of Mexican aviators' in Ensenada, México. The original recipe does not call mustard and garlic and the eggs are supposed to be soft boiled.

The person who touched the lettuce is the host of the show you're watching. it's his show, and he's going to be eating the salad. I think he can inspect the lettuce. (Although it appears that someone takes the head of lettuce and substitutes it with chopped romaine... which is an abomination.

Cardini did NOT use anchovies. EVER. I learned the recipe from Julia Child who learned it from Cardini. Also no Worcestershire sauce. The Hotel added it after Caesar had Passed.

BS, that salad might be savory but the original "aviators' salad" from Ensenada, Méjico is totally different. Cardini plagiarized the original recipe from Méjico. BTW, you forgot to add the ketchup and mayonnaise. 😂
