The Unexpected History of Caesar Salad

No matter who created it (Caesar or Alex) or what its called (Caesar Salad or Aviator Salad), this dish is an absolute icon in American cuisine.
(Note: Many many others also claim that they are the true creators of the dish)
Recipe:
1 head of romaine lettuce
1 clove garlic
1 egg
1 tablespoon Dijon mustard
1 and 1/2 tablespoon Worcestershire
Parmesan Cheese
2 tablespoons lemon (or lime)
olive oil
cracked pepper
salt
day old bread
Coddle the egg (place in boiling water for 1-3 minutes). In a bowl mash the garlic and mix with the mustard, Worcestershire, lemon (lime), cracked pepper. Grate in a good amount of Parmesan cheese (Grana Padano also works well), add only the yolk of the egg and mix. Whisk in olive oil slowly to and make an emulsion.
Cube the bread, toss with olive oil and add whatever seasonings you like. I added just salt pepper and a little oregano. Bake at 350 degree F until golden brown.
I tore the romaine and tossed it in the dressing but you could also keep it whole and serve it more like Caesar would have with a crouton on top each leaf.

Yes, you deserve a pat on the back! Simple and fresh - I am going to make this. I'll add the zest of the lemon as well and I'll use anchovy paste since I have it. Interesting about the two brothers. I'm almost tempted to try lime instead of lemon; in fact, I might actually do that. I mean, how drastic would that change the taste and I can see how that could make it a whole other salad! I'm excited! Thanks for another great video!!

I want to say try the lemon because I know it is delicious, but….I really want you to try the lime and let me know how it is! I wouldn’t think it would be too drastic of a difference, maybe a tad sweeter.

I have to look into when anchovies actually started being incorporated into the salad. I don’t mind them but this salad I made is so light, bright, and refreshing, it doesn’t need anything else.

You might not ever read this or remember my post to you saying I would try using the lime instead and you said to let you know. Well, the original caesar salad was on the menu today and the lime version was outstanding! Not that I'm saying I would REPLACE the lemon necessarily, but for a change up it is so good. The lime flavor was very prominent because I used the juice of two as well as the zest. To me it gives the vibes of the tropics and what's wrong with that?? Anyway, that is how it went with the lime version. It was really good! Thanks for the inspo! 🙂
