No matter who created it (Caesar or Alex) or what its called (Caesar Salad or Aviator Salad), this dish is an absolute icon in American cuisine.
(Note: Many many others also claim that they are the true creators of the dish)
Recipe:
1 head of romaine lettuce
1 clove garlic
1 egg
1 tablespoon Dijon mustard
1 and 1/2 tablespoon Worcestershire
Parmesan Cheese
2 tablespoons lemon (or lime)
olive oil
cracked pepper
salt
day old bread
Coddle the egg (place in boiling water for 1-3 minutes). In a bowl mash the garlic and mix with the mustard, Worcestershire, lemon (lime), cracked pepper. Grate in a good amount of Parmesan cheese (Grana Padano also works well), add only the yolk of the egg and mix. Whisk in olive oil slowly to and make an emulsion.
Cube the bread, toss with olive oil and add whatever seasonings you like. I added just salt pepper and a little oregano. Bake at 350 degree F until golden brown.
I tore the romaine and tossed it in the dressing but you could also keep it whole and serve it more like Caesar would have with a crouton on top each leaf.
