Somlor Koko សម្លកកូរ is a traditional Cambodian vegetable soup that's so hearty. When you eat it, you feel healthy. It's packed with pounded herbs and chunks of veggies. It's distinct flavor comes from toasted rice powder, producing an earthy, nutty, and savory soup. This is a wholesome soup that I've grown to enjoy. Perfect for when the weather gets cooler and you need a fill of vegetables. Enjoy.

INGREDIENTS
Kroeung/Herb Paste
Lemongrass - 1/2 cup
Galangal - 2.5 tbsp (chopped)
Kaffir Lime Leaves - 5 leaves (stems removed)
Turmeric - 1 tbsp (chopped)
Garlic - 4 cloves
Chicken Thighs - 3 thighs (boneless, skinless, trimmed)
Water - 6 cups
Prahok Liquid - Prahok Chunk (1.5tbsp) + Hot Water (1/2 cup) (see video for tips)
Vegetable Oil - 1 tbsp
Granulated Chicken Flavor Soup Base Mix - 1 tbsp
Palm Sugar - 1/2 tbsp + 1 tsp (shaved, packed)
Fish Sauce - 1.5 tbsp
Toasted Rice Powder - 1/3 cup to 1/2 cup (more you add, the thicker the soup)
Roasted Chili Flakes - optional but recommended
Round Green Eggplant - 4 eggplants
Purple Eggplant - 1/2 eggplant
Green Papaya - 1 cupped (shaved)
Yardlong Beans - 2 beans
Kabocha Squash - 1/4 squash
Kabocha Squash Tendrils & Young Shoots - 2 cups
