I am VERY impressed. My grandmother also processed large batches like this, many many moons ago, and I was blessed to be able to help and learn from her. At this point your sister might need to start her own channel and then y’all can collaborate on videos. She is such a natural in front of the camera. Definitely notice the difference with the camera. It’s better. Thanks for your time/efforts with these videos. Love from Texas😊

When handling jars after the lids are placed on them (going into the canner and coming out) try to not tilt the jars. If you do it allows the jar contents to possibly get under the seal and cause issues. I know it is so tempting to tilt the jar after processing to rid the water on top...I've made this mistake a few times and it wasn't a good outcome. You're doing a great job and inspiring both older and especially younger people! That's exactly what is needed in this world! Most have lost touch with our food and where it comes from and what is added and our health is paying for it!!!

Sisters are the best. In the early summer my youngest sister came here for a week and helped me get the orchard planted. My other sister came just recently for a few days and helped me make a load of salsa, carmelized onions, and we also dug up 60 pounds of potatoes, and tore down a wooden fence. It was so nice and fun to have the help. I shared the fruits of our labour, including my first honey harvest. It was the best. 😋🐝

I posted the article below because your sister mentioned the Apple juice was a little bitter! The Apple seeds have a chemical that when cooked turns into cyanide poison which can make you ill! You might want to toss the cores and just use the peel to make your juice! Love your videos! You are awesome!

If you put marbles in the bottom water resevore of the juicer they will bounce around when that water simmers. When the bouncing sound of marbles changes add water. Hint complements if my mother

If you put three marbles in the bottom of the steamer juicer you will hear the marbles rolling around in the pot when the water gets lower. The steamer juicer is fantastic to use when you want to make crabapple jelly or any clear jelly. No more having to use a cloth bag to strain the fruit from the juice.

An easy apple dessert I Danish apple "cake" there is no baking involved. Make a coarse/rustic unsweetened applesauce. In a skillet melt some salted butter add unflavoured breadcrumbs, some sugar and a little vanilla. Stir til the breadcrumbs are golden brown. In a bowl or individual glasses layer applesauce and breadcrumbs a couple of times. Top with freshly whipped cream- no sugar. This is a traditional Danish dessert. Tart apples are best for this. Can the applesauce and you can quickly whip up a dessert.

Can corfirm that’s delish. You can also make it with just plain grated apples, but in that case use something sweet in between; sweet biscuits or something like that, smashed up. That’s apparently an even older version, but one my mom never made.

Feed him to the chickens…🐓😋🐌 Tip: when filling your jars, place your jars on a towel. Because you have granite counters, the bottoms of your jars are in child contact with the granite then you’re putting hot apples in them. That’s most likely why that jar cracked open along the bottom.

Just found your channel, thanks for making these videos! My sister and I just made applesauce and found some HUGE time saver tips. I CANNOT stress enough the value of the KitchenAid Fruit and Veggie Strainer attachment. All we had to do was quarter the apples, boil in a little water until soft and strain. The skin, seeds and stem strained out perfectly. We processed over 130 pounds of apples into applesauce in just a couple hours. It’s AMAZING, and totally worth the investment. Also , love the info on making vinegar.

Here is a tip I learned for the steam canner. Put a marble in the bottom. When you hear it rattle add water.

My mom and I fill hot jars on top of a wooden cutting board. Our counters aren't real stone, but they are cooler than the wood ever gets so it helps diminish the temperature difference.

As a youngster, I hated summer holidays which in New Zealand happened over Christmas. I had to help mum with all the preserving. I have a lot of allergies to small and substances like peach fuzz. However, this didn’t mean I didn’t have to help. From beans corn and beetroot to potatoes meat and strawberries, we girls had to help. I’m glad now cos I know what to do including all the pickles and relish’s mum made. Pickled gherkins to jared beetroot to peach’s and frozen blackcurrant shortcake. Becky, you are what I wish my daughters were; they don’t want to know a thing about preserving food. That you grow produce and then preserve it, I wish every child could do these skills. Becky, it might be too late for your scraps, but next time you have a pot full of apple scraps, boil it to release it juices (kinda like you did with the juice) measure the amount of juice you get and add double the amount of sugar and you can make apple honey 🍯 Delicious on biscuits or toast!

Now that you have the new house with a sun room, lay sheets down in the sunny parts and lay slices of fruit on them to dry. You get dried fruit without having to babysit a dehydrator! My mother used to put a sheet in the hatchback of her car to dry apples. No bugs or wasps! We’d make dried apple pies and apple butter out of it. They’re amazing!

A way to speed up the peeling process is to remove the handle from the peeler and attach a cordless drill. Game changer

I put a rimmed baking sheet under my peeler/corer to catch the juice. You could modify an old one to have a spout on one corner to gravity feed the juice out to a pot on a chair. May save some mopping time. Love your organization!

Always remember hot food ,hot jars and hot canner. Cold food ,cold jars and cold canner. When you are doing large batches like you have done here you can keep your sterilized jars in the oven @ 230 degrees to keep them hot. This way they will be ready to fill and put into your hot canner. Awesome video Happy canning !

Wow, that was a huge canning and juicing day! You are blessed to have a sister close by to come help you with processing those apples. Of coursed she’s blessed you share all your homestead goodies with her too. I want to make apple butter and after watch you juice, I’d like to try juicing and making apple cider vinegar. Woo hoo!!! Processing day!! I've been busy too. I just did a bunch of grapes (still have more to go lol). My steam juicer is a few qts smaller but has a spigot on it. I think we got one whole apple from our tree this year lol. Our neighbor gave us a small box of apples off his tree and I made an apple pie with them. So good!! I used a peeler/corer too...made it go so fast.

I live near an organic orchard. Apple season is the highlight of my year. I use apple juice in my crockpots instead of water so it maintains the apple flavor better & I reduce the amount of sugar I need to add per batch. I usually wait & use apples I didn't get processed to make vinegar. I had never thought about using apple peels for juice. So I bought myself one of those steam juicers. Great idea. I'm usually too tired to make apple jelly which is what I promise myself every year I'll make from the peels.

You're doing such a great job making good use of all your abundance! One little hint when making apple juice/cider......make ALL your cider, mix it together, then can it. That way you blend all your apple varieties ;-)

Hi Becky I've been canning for 30 yrs and only had 2 jars break in all that time. BOTH times they were defective jars!! You might check your jars before filling them. Now I don't use any jar that isn't marked Mason, Ball or Kerr and have not had that issue of broken jars! Just FYI...

My new favorite tubie. I received a gift of apples last year I did all the same and dehydrated a bunch too. Hot tip sprinkle cinnamon and sugar on them before dehydrating for a special snack.

@@cynthiafisher9907 Use a larger crystal sugar, usually can be found in middle eastern groceries. Works really well and makes the fruit only slightly sweeter.

Wow what a great and productive day. Give your self a gold star. BECKY 2 things I want to tell you from a person that has canned a long time.... Never tip your jars when you take them out of the canner, your seals could break. The water will evaporate. When you set your jars on the counter make sure you give them some space between them. Just some things I was taught. Love watching your videos. Great job!!!!

I got a sauce master and steam juicer this year because of your videos. After many years of running my cooked whole apples through an ancient, manual food mill, this year was ahh-mazing! I chopped my apples in half and tossed them in the steam juicer. After cooking for an hour or so, I got almost 3 quarts of juice. Then I put the cooked mush from the steamer basket through my sauce master for perfect, already thickened applesauce. It was brilliant!! The leftover pulp (which was hardly anything) went to some very happy chickens 😁

I had 3 of these for my 3 boys who loved dehydrated apples and apple crunch. They would all work together and in no time we had a lot of apples processing. Those slices make all apples easy to dehydrate. We also had 3 butter slicers that they used to slice bananas evenly. Fun times!

The only issues I have had with the Ball Preserving book is that some of the recipes have too much sugar. I think they must be using Granny Smiths instead of other cooking apples. Just as a reminder to everyone, do NOT process apple seeds, apple seeds contain amygdalin, a substance that releases cyanide into the blood stream when chewed and digested. I am making a double recipe of apple - pear butter today and then canning it up. It was terrifying me seeing the cores tossed into the mix, did you remove all the seeds before processing??

Yay, Becky's in her kitchen...let canning and preserving commence!! I have been so looking forward to this... you are such an inspiring young woman!! It's wonderful to see and live vicariously through you Becky. It's great to experience what you do. It's what my husband and I would have done if we had met each other when we were younger!! Do you have mince pies at Christmas made of pastry and dried fruit and suet (I'm in the UK). You can use apple in that and if you have access to Black Currants, Apple & Black Currant Jelly ( Jam) or if earlier Apple & BlackBerry jelly (jam). So many things you could make if able with the time etc.... it's just such a pleasure to watch you, your presentation is so good. You make me feel welcome and as if I were there with you & your sister processing the apples together, I'm sure it's the same for others!! I love the way you are so honest and passionate with what you do, it is soul inspiring. You really are such a lovely person!! I shall be popping over to Instagram for more great viewing.
