I've picked a small amount of my rhubarb. It's sitting in the refrigerator right now. Perfect timing Toni! Although mine is Victoria, which is green, not red. Still tastes and cooks the same! Have a blessed evening ❤

My rhubarb here in northern Michigan has absolutely exploded in the past week. I have never canned it, but will plan on doing so in the next few days. I generally get 3 harvests from my plant every year. Last year I froze, freeze dried (it took forever!), made a cobbler, and some strawberry-rhubarb jam.

When your rhubarb gets big enough for a big harvest, you can dehydrate or freeze dry it, grind it into a powder and use it when you don't have lemon juice for a recipe.

I canned first run of rhubarb last month here in the NC Smokies and did almost same as you. I’ll be picking my second batch this weekend as it seems this land loves to grow rhubarb, but I don’t do as well with raspberries and blueberries. Strawberries have been okay this season. What does the taste of Rhubarb resemble? I have never eaten it. What a great idea to freeze-dry yogurt! I admire your industriousness, Toni! ♥

Rhubarb is tart like lemon. It was used mixed with other fruits for recipes because unlike today, lemons weren't available year round. People use it today because there are long tested recipes that use rhubarb and its an extremely easy perennial plant to grow in colder climates where citrus won't grow.

Toni, as a suggestion I've tried Pam cooking spray with canola oil on the ice cube trays before you put the yogurt in. It adds no flavor and makes it easier to pop the yogurt out. We've put up Canned Rhubarb, Strawberry Rhubarb jam and Strawberry Marmalade.so far this year. Love Rhubarb in all its forms. Sending love from Southeastern Pennsylvania in the States. Love your videos, as a suggestion for future video, perhaps a soap making video?

hi i had canned some peas awhile back and noticed a cloudy starchie like substance on top inside the jar is that alright or normal

Maria, It could be fine however, I cannot tell you that it is, based on your description...SAFETY First, and when in doubt, throw it out!
