CATCH, CLEAN, & COOK: Nasty Bluefish...?

One of my first trips out on the ocean in the area was sorta uneventful. I learned quite a bit after this trip (kings aren't too into live croaker & spinner sharks hit everything). However, sometimes you head out and just "wing it" and that's exactly what I did here. We caught a couple of bluefish and rolled them along the beach and tried trolling with no luck. I ended up giving it another go at the chefs table and well....the results are in.
I went with a simple approach on the bluefish and prepped the crabs in a way I've never tried. The bluefish I gutted and let rest overnight and give a full pan fry. It wasn't bad per say but I wasn't blown away. I prepped the black drum and and crabs in a Garlic Butter sauce.
Garlic Butter:
4 Tablespoons of butter
4 Cloves of Garlic
1 Tablespoon Olive Oil
1 Cup White Wine
Seasoning of your choice (I used Lemon Pepper)
You can also save the Garlic Butter for a sauce on anything else too...I just added a little corn starch to thicken it while continuously heating, just be careful to not burn the butter!

Little more fond memories of the bluefish eating after this trip. I've always found other fish to be much better at the table but this wasn't bad. This was one of the more tough trips. Have learned a bit more about kings, spinner sharks and all that stuff since...but nothing is better than putting in some time and scratching your head! Some really good footage coming this week. Also shads are on their way. The late April volume was surprising (and overwhelming). I hope not to run out of stock so hard for the rest of the season.

When I was living in Florida, people used to catch sheepshead all day on the jetties. They seemed to like the structure, and people used sea urchins for bait. They would pull them off of the undersides of the jetty rocks, crack them open, and hook them up. More fish than you could want. Whenever we cooked up blue claws here in NJ, we used beer. Whatever cheap stuff was available (usually Budweiser; not much good for drinking anyway) with enough Old Bay to cover the surface of the liquid. Bring it to a boil, throw crabs in, and cover until they were done. Delicious, and really clears out the sinuses.

I really don't get why a lot of Americans think Bluefish are bad eating, here in Australia Tailor (Bluefish) are probably one of the most common fish targetted and eaten, and every time I've eaten them they've tasted awesome. All you do is bleed them as soon as you get them out of the water, chuck them on ice, and cook them the same day (or ideally, within a few hours) of catching them. Who knows, maybe the bluefish across the pond taste different to the ones here in Australia, because us Aussies eat them like they're going out of style.

Sounds exactly like our Pacific bonito lol. Not the Bonito in florida but the true bonito.Their flesh goes bad really easily if not put on ice and bled.

I catch and eat a lot of Bluefish. Here in SA we call them Shad or Elf. You HAVE to bleed them as soon as you catch them for best results. Cut the neck and then break it by bending the head back. Then gut it. After you gut it run your finger hard against its back bone this forces more blood out the bloodline. Do this as soon as you can and preferably at the beach.

I know I'm 5 years late but I'm here regardless!! If you wanna help with bluefish smell I do a small rub down with soy sauce and salt when I have it sit and it nullified the "fishyness" much love man!

Bluefish is surprisingly good imo and it’s in how you prepare it. No crazy seasonings or soaking it in crap. Has to be eaten fresh though. Immediately bleed the the fish when caught, do not freeze the fish because bluefish meat don’t hold up well in the freezer... this will cause the oils from the dark meat to seep into the rest of the meat and give it that “taste”. Cut away all the dark meat as best as you can. Salt & pepper and pan fry in a little oil. The meat was white and flaky which surprised the hell out of me. Again it’s preferred to be eaten fresh or the day of. Now I’ve had smoked bluefish before and it was phenomenal. Smoked is the way to go honestly.

Yeah I have been so confused on why so many people saying that blue fish is a nasty fish!? I've grown up eating it and have always loved it! Definitely I've always ate it fresh, killed it and kept it on ice also. Definitely cut away the dark meat also. And wow I've never seen somebody cook crabs like that

I've served a lot of bluefish to folks who did not believe it was bluefish. As you folks mention, fairly small, bleed them, on ice right away, trim off the blood line. Dusted lightly in seasoned flour, pan fried in butter is very good. Smoked fillets, skin on is fantastic. These can be up to 6-7 pounds or more, and still taste excellent.

I grew up eating blue fish and I loved them! Haven't had one in a long time, unfortunately haven't been able to fish the ocean or Bay or serve as much as I'd like. I'm going out this weekend and hopefully I can catch some and try them again!

Down here in Brazil Bluefish is considered a very good fish to eat and is fary expensive though.Very popular on japanese dishes, but I agree that it depends on how you cook it. I like it grilled like barbeque with salt and pepper only. Put a little bit of soy sauce, than that is just about it. Can´t get any better that that imo. Weird that you do trashy fish Catch clean and cook, but in fac the majority of what you guys considered trash fish are not considered trashy here as well. Love the vids, keep them up!

You can season a fish however you like but try throwing a little dill weed in with the seasoning too....it's surprising how well dill complements fish. Thanks for the vids Elias, great stuff!

As you can tell by all the comments...many people have eaten and love blues, myself included. Always eat them fresh. 12”-15” best size. No need to bleed. Fillet, leave skin on, cut bloodline out and fry in vegetable oil. Use yellow corn meal for breader then salt right after you take out of pan. If eaten other varieties make sure to eat blue last. If you eat blue before other variety you will not be able to taste that fish.

In the Chesapeake the limit is 9 inches and if I find a school of them around that size I keep some. I smoke them and make dip and it's awfully good. Can't freeze bluefish ever but smoked it's nice! The smaller the better for sure!

Bluefish is delicious. Here in Australia we call them ' tailor '. The secret is - THEY MUST BE BLED ON CAPTURE. Otherwise they are disgusting . Try it and you will see! They also smoke BEAUTIFULLY

That’s the perfect size blue and the only way I cook them. The sauce looks great, I’m going to try that next time with my fish. Crabs are always a nice side. Keep em comin’ ..

Deeper bridges is where the sheepshead are. Never hear of many caught on ocean reefs in NC. Fiddler crabs for bait. The sheeps are still moving into the area tho.

Hi Elias , I am trying to find a video of yours you posted of your truck and the Thule rack with hullivators .... I am looking for a set of hullivators and wanted to see how they were mounted to your Thule truck rack .. I have an older track rac I was hoping to mount the hullivator on ... I am curious if it mounts in the middle of the channel like the slot that’s in the rac ? The Thule truck rack has the same slot so I think it may work but I figured I would check in and ask you for your help Great videos btw I watch all of them !good work !

You probably didn't do the drum any favor by cooking it next to the oily blue but I'm no expert. Blues are good enough and plentiful they just have to be fresh. Bluefish is much better than no fish. Thx for sharing!

Bluefish is great. Cooked whole on the grill. Pick off bone and top with garlic, Olive oil, lemon, parsley.. Touch of salt. Bam!

if im keeping fish in the fridge overnight or longer, I ALWAYS put them in a tub full of equal parts ice chips and water. it lets them bleed out any remaining blood, firms up the meat, and keeps them extra cold and fresh. I've kept bass, crappie, and pickerel this way for up to a week. I wouldn't go that long with saltwater fish.

Filet your bluefish , remove ALL red meat, put the filets in boiling water until done. Put the meat in a colunder to drain and fluff. Prepare the meat as if you were making crab cakes, don't forget the Old Bay seasoning. You'll be surprised.

I'm from new england alot of bluefish eating. Snappers are good anyway you cook them. For the bigger ones fillet with skin on, brine overnight, and smoke with mesquite wood. Tastes like fish bacon

I have eaten a 15 lb bluefish and it tasted pretty good. All we did was marinate it and grill it I just don’t know what it is. Also, the snapper blues are usually pretty good. I fry the little fillets coated with egg and bread crumbs

I tried a salt brine for a couple hours then I used a light barbecue seasoning that was originally intended for chicken. Worked out really nice. Bluefish need to be grilled or at least cooked on a rack to taste good. Otherwise they will sit and fry in their own disgusting oils. I season them like I mentioned above and cook them on the grill. I either put them straight on the grate or I fill a tin roasting pan with water and make a bed of apple wood twigs. I set the fillets on the sticks above the water and sort of steam them. It turns trash into treasure

We had a ton of luck using a BWC Spanish Daisy on Saturday. We had 3 lines out, and it caught about half of our fish. Trolling about 6mph. I imagine you can get pretty close to that on the hobie.

Try putting marinated Bluefish fillets in a slow smoker. Because they tend to be oily they will stand up to a longer smoking time without getting too dry. The smokey favor compliments them well.

around here we call 'em Tailor, around 30cm-50cm is great eating. best eaten fresh, they should ideally be Bled on capture and placed on ice they can spoil rapidly and don't keep too well in the freezer (flesh goes to mush)

For the folks saying they can't believe I don't like bluefish. I am one of those fish lovers, who when I complain say it taste too fishy. Another fish I never liked was King Mackerel, but to my surprise I got a great recipe i loved. Take a large King and steak him. make a marinade with frozen orange juice concentrate, whole can, add two large table spoons of mayo tea spoon of worcestershire sauce. Put on grill and do both sides 4 to 6 minutes depending on size of fish. you do need to brush continually, It was an awesome meal. Lol, maybe I should try it on a big bluefish.

If memory serves, you're moving to Wilmington? If you get a chance, you should head towards the piedmont once or twice and try for some of the massive catfish in the reservoirs. It's not unheard of for the them to be up towards 100 or so pounds, give or take.

Cut out all the red meat boil until done, let fluff in a colander and make "crab cakes" out of them. Be sure to use old bay seasoning.

I caught an 8 inch blue fish, i killed it, gutted it, I fried it in butter and garlic. Best fish I ever had, maybe because I did this all in less then 10 minutes
