CATCH & COOK: The "HIGHLY TOXIC" Big Barracuda

Well I finally caught the cuda. A little refinement on my technique and I drilled a 54" cuda the other morning. I worked the tube combo over some structure where I have been missing those fish for the last week and change.
My rig consisted as follows: Braided line - Ball Bearing Swivel -three feet of wire - Tube Lure
I added another haywire twist and a 3/0 treble to the mid section of the tube. Maybe you don't need it and I had some bad luck last week.
Upon landing the fish was bled, and iced. I filleted it and used one of the cleaner pieces for a raw prep. Paper towels wrap + saran wrap overnight and placed in the fridge. The rest of the cuda was vacuum packed.

Thanks to Dan for being a good sport. He does some great work for those that are interested in his craft check out his channel - bit.ly/2MoqAE3 This fish seems to be all over the place. It's a favorite eating fish in the Bahamas (and I can see why) but also carries certain risks based on region. But so does your shrimp from Thailand and all other farmed fish right? Flies landed all over mine to address that method, but if your area is known for coral and the potentially toxic algae that accumulates in these fish...I'd eat with extreme caution.

all depends where you live...I recommend you to test ciguatera before eating.

As far as I know, there is no test for ciguatera that is available to the public. The old wives tales about a cat not eating or flies not landing on infected fish are just that, old wives tales.

I did see it. The test kit is not made for a non-laboratory setting. If you read the text in the kit description it says: "Detailed instructions and a list of supplies to acquire and instrumentation settings are provided." If you need other instrumentation then it is not an "at home" test kit. As far as the cat...I'll believe it when I see it

Hey Chef, great to see you with Elias. That was a big big boy there though. I don't think I would've eaten one that big, but way to go!!! If you subscribe to the toxins theory, then the bigger they are, the more it collects over time. So I would definitely eat one, but under 10 lbs perhaps. Anyways, great to see you on this video as well!!

I’m Bahamian and the best way to prepare Barracuda is season with lime, pepper and a little bit of salt. Let it marinate for about 30 minutes, dip in flour, then fry it. One of the best tasting fishes ever, especially it you add a little more lime and pepper after cooking. However, I was poisoned from eating this fish about 31 years ago, but never stopped eating it. The trick to being safe is to stay away from the very large ones, and / or to fillet them. Good luck.

Yeah. It takes someone a while to figure out how to handle a certain fish then you get more comfortable. I know I didn’t start tail grabbing 10lb blues on my first go either.

I loved the taste of barracuda when I caught some in Cozumel. They are reminiscent of my favorite home freshwater predators, the northern pike and muskie.

I worked in Puerto Rico years ago and the locals loved barracuda. The way they would test the big ones to see if the fish was high in mercury was to put a copper penny on a filet for an hour or so. If the penny turned black or grey, they would toss out the fish.

Love that you appreciate the taste of northern. sure, they smell, are slimy, are very boney, but they are DELICIOUS! Im in Minnesota where we have ample northerns in fresh lakes, and it astounds me how many people hate them.

That's awesome E, and having Dan from "Sushi Everyday" was like hitting the jackpot. I have been a sub of his even longer than I've been of yours lol..... He is great too, I've had questions about certain fish, and even talked to him about certain fish he's caught on his videos. You guys need to both go out and fish, and then do kitchen collaboration. I gotta say I'm really enjoying your Catch and Cook. I'm too old to get out and fish anymore but when I did fish I pretty much ate what I caught. I did more freshwater fishing than saltwater. Lots of river and lake fishing,,, stream.... I had people tell me not to eat a blue runners but... I ate those and permit. Permit weren't great but then I didn't have much around when I caught, and cooked on the beach... anyway thanks.

The shimano has certainly performed this season. 48” plus redfish, beast black drum, deep water fluke, and cuda. No complaints.

Nice as alway Elias, thank you .... The white stuff is the connective fascia membrane encasing the individual muscles and that allows them slide over each other ...same as the silver on chicken and envelopes all other meat muscle tendons ligaments... all the same related tough membrane. .... and.... BTW.... the non sexist "Rule of Thumb" down in South East Florida... "Cuda is Good to Eat to 20 Inches" as they are less likely to have accumulated enough Ciguatoxins concentrated in the fish liver, intestines, heads, and roe, that would to get you sick. The bigger >onessssssss,> are more likely "high/longer risk" of getting ciguatera sick and believe me, some folks have suffered pain for years from eating big grouper and other big and older reef fish. Also the smaller cuda's flesh is much whiter/firmer and don't stink near as much of that nasty Iodine smelly skin slime. Back in the day... When snook were out of season.... getting a small Cuda's near the intercostal inlets was the next best for eating go to... cause unless you over cook them they are every bit as good tasting as snook

Glad you finally got your cuda. Looks good, I haven't tried cuda myself yet but have always wanted to. I hear the smaller ones are better to eat and don't have ciguatera cause they are still on the flats or haven't been on a reef long. Definitely gonna have to get me one to try now lol. Great vid!

Great video, quick tip for the ciguatera, simply place a small piece of fish next to ants if they eat it it is good to eat, if they dont touch it, then trow it away works every time.

Good point that your reef habitat is artificial, and not populated with the algae of concern. Lucky for you as cuda is a tasty fish, though I have only eaten smaller ones from areas of South America. It grills up very nicely, if you enjoy fish that way. Thanks for the ride!

I caught one several years ago (similar size) and couldn't get past the smell. Sort of reminded me of an electric weed eater my dad had that burned up. I hated to waste the meat, so I gave it to a neighbor and he said it was good. If I catch another one, I'll have to give it a try. Elias I'm in Wilmington and fish the ARs and the Cape Fear River regularly.

Negative, I did not yet. The bigger Gulps! here are oyster toad magnets I'm learning. I'm still green to fluke/flounder here and have mostly been doing it on structure so I need to adjust my way of fishing vs the other numerous bottom fish.

ciguatera poisoning, fish that eat reef fish can accumulate the toxin in their flesh. It's hit-or-miss whether you get it or not, even on the reefs, but I've heard the symptoms are AWFUL. You're not supposed to ingest caffeine, fish, alcohol, or nuts for like 6 months or something after you get it, it can take years for the symptoms to go away, and it's incurable while you have it... oh and the toxin isn't destroyed by cooking either. I wouldn't risk that kind of stuff, call me a coward lol

I caught a big one like that in the keys on 10 lb line. Was pulling my little snapper jig out of the water when he grabbed it. Hooked right in the lip away from the teeth. Almost spooled me several times, we ended up chasing it, took about an hour. We used him in my buddies stone crab traps. Down there you shouldnt eat em cause they eat parrot fish and get the cig. In the Bahamas they put a small.piece on an ant pile, if the ants eat it its safe

Take a look online for a Bahamian recipe for barracuda. I've had it a number of times down there on fishing trips and it's delicious. All I remember is it what grilled but I'm sure there's info online.

I catch a lot of barracuda out here in California, yeah they are really slimey and stink. Love catching them though, good fight

Small baracudda is way more delicious than even kingfish, it has more fat and tastier... though baracudda has bigger and stronger spine and bone... not shore in your area there are yellowtail or Greenevill baracudda... Handling that gigantic barracuda on that setup was also great! :))
