Anything shortbread is my Achilles heel. Tasty "cheese" shortbread is going to be my undoing. I am fixing to make a pot of roasted tomato soup tomorrow and I think making a batch of these Cheddar Cheese Straws would be the perfect side. I'm literally going to roll them into tubes, (like a breadstick,) cut them and then bake them to lay along side the bowls. I think it'll be really appetizing. Thank you, Tammy! Love ya!

My mother used to make cheese straws. She had a Mirro press to press them out. I do not know how she did it and i watched her, but I could never use it. She used to grate her fresh coconut by hand too. I did that the first Christmas after her passing. I told my family, enjoy it, next year frozen and it is just as good. I loved her cheese straws. They were so good. I love the rosette tip, very pretty. Cheese Straws brings back so many memories of my mother. There is a recipe that uses rice krispie too and she made those too. My mother passed away in 2009 and this year, I do not know why, but this year is harder.

Cheese straws bring back great memories. I watched my Grandmother make them for many occasions. She used a cookie press with a star tip with just one continuous motion to cover the sheet pan. After removing from oven she would cut them into 3 inch ‘straws’.

The piping makes for BEAUTIFUL straws, but my aunts and mama were practical and rolled the dough and cut it. Not nearly as pretty, but so much less labor intensive and just as good. Either way, cheese straws are a labor of LOVE.

Hi Tammy! Who doesn't love cheese straws?!! We've always made them with White Lily flour! Grandmother would fold a small amount of finely - chopped pecans in some of her cheese straws. Mother sometimes used a blend of sharp cheddar and jalapeno jack cheese in her cheese straws. They all were delicious!! Thanks for the demo and another video!! 😊

These look amaz-za-zing! Ive only even heard of cheese straws about a year ago and Ive never made them. To me they seem like they would be a very delicate, flavorful crispiness. If I get a proper mixer at some point this will be a must make! God bless you and Chris, Shirley.

Tammy, I just made these yesterday. I always just press mine into a rectangle on floured board then cut the strips about 1/2” wide then cut the long strips into about 2” sections. Then I take a fork & press into the long strips all the way down to make inventions so they aren’t plain. I do that before I cut into 2” pieces. It’s easier than a piping bag or a cookie press. I make these every Christmas. My recipe is from Southern Living. Now here’s the new twist on these traditional cookies. After pressing out the rectangle and before cutting the strips I added Panko Crumbs fairly generously to the top & pressed them in slightly because they will all just fall off if you don’t. Then I cut them & didn’t run the fork down them to make indentions. They turned out great and had a very crunchy exterior. By the last batch, I was rolling each straw piece in the crumbs front & back. These were the best ones. Try it next year, I think you’ll like it! BTW, your s looked delish too. I especially liked the rosettes. I never met a cheese straw I didn’t like! Love, Hugs & Merry Christmas Tammy & Chris!

We bring the mixture to room temperature and use the star tip on an old crank cookie press. You slowly use the crank and a screw on the inside presses the cheese out. It doesn't need real strength, just wrist power!!!

Love the rosetts, never thought of those. We do pan-length straws and then break them up in about 3-4" straws. We do wreaths and candy cane shapes. Don't put in a roll and cut, for some reason, they just don't taste as good that way. Don't know why! Thanks for sharing your recipe!!!

Tammy, I love those big rosettes. I have bad arthritis in my feet, ankles and hands. I sure do feel for. I'll say a prayer that God will heal 🙏. Every time something is hard for me, to cook, open a jar, lift a bag of flour I always think of my loving poor aunt Sarah who, bless her heart became bedbound from severe arthritis. I hope she hears when I say her name because I sure loved that woman. I remember she crocheting til she couldn't anymore but bless her heart she taught me how to every time we went to see her. She was an angel 😇 then and I know she's an angel 😇 now. So, take it easy on your body. I also have Fibromyalga which doesn't help. I thank God I have a great husband who helps me so soo much. Love you and your videos. You make me smile every time I watch.

I've done a lot of experimenting making cheese straws. I've found that if you don't cream the butter and cheese so much and leave them more like a biscuit dough it actually comes out really good. You need to finely shred the cheese but if you stop before it's all cream consistency and you still have some little pieces when they cook up they will get a browning reaction that tastes really good and make the straws crispier. Also if you leave it more like biscuit dough with the butter not completely creamed they cook up a little flakier too. Try it and see!
