im 23 years old from morocco i diagnosed with diabete 3 months ago with 13% of A1c and fastung glucose 280mml i start watching dr sten and dr Jason fung and dennis. going through Keto diet and intermi.. fasting and walking . Hundreds of Keto videos watched and I think you're the first person who has explained why grass-fed beef is better than grain-fed and how it gets that way. I grew up on a cattle farm where the cows were left to roam the pastures throughout the day. I loved beef as a child until I moved to the city. That's when I stopped eating beef. I never made the connection why. Now I know. I love how you back everything with technical, science-based facts and provide the numbers to reflect it.

For those on a keto lifestyle you will also want to consider kidney stone formation and seeds with low oxalates. These would include flax, hemp, pumpkin, sunflower, and watermelon. By eating a modest ketogenic diet high in polyphenols from green tea and/or resveratrol you can help keep the epithelial lining of the kidney smooth and healthy which slows the seeding of calcium oxalate stones. Also drink more water than you think is needed to stay away from the saturation point for stone formation. Your kidneys should be like a flowing creek, not a swamp.

Thank you Dr. Sten Ekberg. In my experience too much of omega 6 (sunflower seeds) slightly increases my triglycerides. So I switched back to pumpkin seeds and it's a lot better for triglycerides. Omega-6 fatty acids can raise triglyceride levels.

I have a spare coffee grinder. It is now my dedicated flax seed grinder. When I make a salad, I put in a couple of table spoons of flax seeds and grind for about 5 seconds. Then that gets sprinkled over the salad.

I follow An advice From a book written by an American doctor since 2004 , as follows : Take 4 seeds , same weight , and grind them separately . Then fry on the pan , without oil . You can mix them first then fry later . Frying a little bit to make the mix dry , to keep it longer . Mix together . Store in a glass container Put one 1 , or 2 teaspoon in a cup of milk you use ( my breakfast consists of a cup of milk and a half banana ) 4 seeds : flax seed , pumpkin seed , sesame seed and sunflower seed . By this way , you don’t have to grind any time you want to use it . I grind 50 g each type , and use about one month .

When I consume flax seed I like to do a variation on the Fosube shake: I use an immersion blender in some kefir and add a tbsp of nutritional yeast to raise the level of methionine to boost the protective effect of the protein. I throw in some blueberries and amla powder for brain health.

I love sunflower seeds in the shell because they keep my mouth busy, and I don't get tempted to snack on other foods, but it's good to keep the carbs in mind! And the salt can really add up.

Eating them in the shell also slows down the rate of consumption. You can buy low-salt sunflower seeds to help limit salt intake.

I have watched this video to the end and read a bunch of comments, I was hoping to find out if blending/grinding chia helps release more nutrients like it does with flax. Chia is more than enough to soak ( 2 times water or milk per amount of chia seeds) them a few hours/ I prefer over night and consume it next day.

Love your videos. Thank you for the research that you do to make them. I make chia seed pudding sometimes for desert with heavy creme, sugar-free almond milk, vanilla extract and stevia, I stir the chia seeds to try to incorporate the seeds into the liquid and then refrigerate for about a half hour. So what your saying is the chia seeds that don’t turn gelatinous are just passing through the gut and the omega 3’s are not available for those ones? Thanks again!

When grinding Flax seed, avoid putting too much heat into it. I put raw seeds in freezer the night before, and put the steel coffee grinder containers in freezer too. Then when I grind them, it helps to keep temperature lower, preserving nutrients. I also have just heard that SPROUTED flax is best

I grind flax seeds and add them at the last step to soups. However, don't cook the soup with the ground flax seed or they will "gel" and it gets kind of gross (texture-wise).

I use flaxseed for my crispbread. Just soak them in Water, add some salt.I spread the flaxseeds on a baking tray and let them dry.Soooo good with butter.

@@peshakaufman3889 I use whole flaxseed, but you can grind them. I add just so much water to cover the flaxseed, they will expand and thicken after a while. You can add water afterwards if you need to.

Add Sabja seeds (basil seeds) and a spoon of flax. Sabja seeds plump up in about 5 min.. I bought mine from amazon.. or Indian grocery store. Amazon is a better bet.

But do remember that he said to keep total omega 6 under 15 grams per day. More omega 3 will not counter the inflammatory response.

I like the way you explain complex scientific stuff in a simplistic manner. I make my own flatbread every day and I include a tablespoon of flaxseed, half a tbsp of sesame seeds and half a tbsp of poppy seeds. I'm doing keto and exist on two meals per day. I'm just wondering if I'd get away with that, being on two meals. Or whether I'm pushing it. I've been leading a Ketogenic lifestyle for more than two years

I made a cup of quinoa, spiked my blood sugar over 50 points. Seemed to spike my blood sugar the same as white rice. I find stay away from grains. If you have a blood sugar meter test one hour after eating a single food. Ideally you don’t want to go over 140 mg/dL. Walnuts seem to spike my blood sugar the least.

Happy to watched particularly this one since it revealed to me that I overdo with hemp seeds on daily basis. Indeed they have a substantial content of omega-6s so I'll cut the daily dose to 1 oz for my hemp-milk shake. Yes this is a great video. My understanding is that you only need to grind the flax seeds. The nutrition from chia seeds are fully available without grinding tho soaking them for 20+ mins is best

I am surprised nobody talks about camelina seed. It is higher in omega 3, full of protein, and relieves inflammation. So much, that the oil from it is given to older horses to relive their joint pain. It won’t go rancid like flax as it has natural antioxidants including vitamin E. The oil has a very high smoke point and I use it for frying foods.

I've been following your vlogs. You make sense way better than nutritionist. I was diabetic 1 taking injectable insulin. I fo use Chia seeds everyday in almond milk. Also, Quinoa is use as my rice and pumpkin seeds are ground and put in sauces.

Hi Biutiful Kruz … I would be one of those "skinny" people. I developed Type 2 when I was around 51 years old. When seeing a Diabetic Specialist, he told me, that as "some people get older, they develop diabetes. We don't know why." Not the answer you're looking for. I am the only one from my parents and 4 siblings that developed diabetes. BTW, I am 130 lbs and 5'8" and control my condition through a low carb diet and walking daily. Currently 57 years old and now off of all medication. Cheers, Steve

Flax seeds make gel consistensy in boiling water. Curly girls make this gel and use it as a hair treatment ( it's extremely moisturising, add shine and hold to the hair)

Dr. Ekberg, Thank you for an excellent video on Chia Seeds, Quinoa, Flax Seeds, Pumpkin Seeds... It was extremely informative. However I have a question: What happens to the fat content of all these seeds and nuts if we soak them overnight before consuming them? Are there any studies on this subject? I do this everyday…. I soak almonds, sesame seeds, sunflower seeds, peanuts, hazelnuts and walnuts…. And I have seen that when I wash them with the lukewarm water the next morning, an oily layer forms over the water. You can see traces of oil all over the water level. That means some oil leaks out. That means the fat content of the oilseeds reduces after we soak them. I have also heard that enzyme activity increases in the seeds after soaking up, which helps us digest them better. On my part, I have been consuming them since years and I have not seen any ill effects in my body. There have been many days when I have used these soaked nuts for KETO diet, specially when I am travelling. Soaked nuts are very easy to carry, and they provide good satiety throughout the day. However while my experience is so far absolutely positive, there is very little information available on internet about nutritional profile of all these oilseeds and nuts after they are soaked. Your take please…..

What if you increase the resistant starch in quinoa? I cooked some and then refrigerated it for a day. It did not spike my blood sugar when I prepared it this way.

What do you say about lectins? As most of the seeds of it. Flex seeds has no lectins, but all the other seeds have and those are all inflammentory. It would be nice to get your opinion. I always enjoy all your videos. Cheers
