I went to Guangzhou’s Huangpu District to sample one of the most unique types of hotpot in the whole country: 'yuguo' or FISH POT!
Every single part of the fish is used to create the dishes that go into Guangzhou's fish pot, including the intestines and the swim bladders! Some of these dishes might not look very appetising, but there must be a reason why this hotpot is so popular amongst Guangzhou locals.

Stu 👍👏 you are truly courageous as well as adventurous in trying out this fish pot, the fish intestines as the ultimate challenge. As a Hong Konger this fish pot and its ingredients do not appeal to my taste because they are too similar with 鯪魚being the sole source of meat. Even the dip only has soy sauce and ginger in it. Try to look for other types of 廣州 hot pot that should widen and excite one’s palate.

Wow, my home town. And I’m jealous! It’s been developed a lot since I had it when I was little. There are a lot of places in Guangzhou have fish hot pot, just in different forms. The one I had is in a huge fish market, pick a shop and a swimming fish of your choice, then the shop processes the fish, cut into small pieces, slices precisely saying, according to different part of organs and body parts, present it on the table with a light taste of soup in the middle of the table. It’s like the shandong seafood market you visited before. After consuming a decent amount of fish, the soup contains more freshness from the fish, then we put in more other hotpot stuffs in, using the fish soup as a concentrate umami hot pot soup base to cook everything. At the end, my uncle will even drink all the leftover soup up, he said that’s the gem. But that color didn’t quite appealing to me, I just eat the fish and snacks. As you are in Guangzhou, there are a lot other stuffs to try, it’s endless surprise. We, Guangzhou people, basically eat everything, anything from floor to the sky. I’m not that good though, very average. But a beef tripe noodle is a classic, 牛腩面, hummmm, there are too many to say to be honest. 馄饨面,肠粉,用布蒸的的肠粉,I guess there are more fancy forms of food nowadays as Chinese people are picky about food and never stop finding new things to entertain themselves. I hope you find your amazing food in the Guangzhou trip, fish hot pot doesnt blow my socks off, I bet there are other food do, will find out when I go home. 😊

The best way to taste the fish intestine is to steam cook it with egg and chinese doughnut (油條) , and season it with pepper powder. That is really really good.

The Hong Kong style is baked it with eggs, white pepper powder until the top is slightly browned. The texture will be like custard.

The fish noodles sound fascinating! I would have so much fun with cooking the swim bladders! I also didn't know that such could be eaten. I know in Korea that the dried swim bladders (or isinglass or whatever it's called) from some fish species are boiled and then rendered to make a super strong and natural glue that is used in their gakgung/archery bow--making process

I love the common hotpot of Asia , the non spicy one, using pork or chicken carcasses stock. Singaporeans and Malaysians use the non spicy hotpot base during their Chinese New Year reunion dinner. In 1998, I was in Chengdu for the spicy one, I asked the restaurant to use less spice and oil..they accepted my request. I had a lovely time of lamb, chicken, pork, prawns, vegetables ala carte buffet style.

It is a real pleasure to watch your video, because you concentrate solely describing the delicious food you are eating. I have been living in Europe for 34 years, in an area where there is no Hot Pot restaurant. Incidentally I observe your expertise with chop sticks. Thank you very much and take care.

Happy New Year! Thanks for sharing this fun fish hotpot. The fish paste on the plate looks like something my in-laws make, pan fried (fish pancake). Never had it in a hotpot before.

I always love your food videos. You describe it so well. The only thing I wouldn't try is fish intestines and the swim bladder of the fish. The resr looks yummy but they should have more variety of dipping sauce.

Definitely wouldn't recommend the intestines. The waitress told me afterwards even locals aren't too keen on them.

说实话淡水鱼挺腥的,对外国人来说应该不太喜欢,特别是鱼鳔和鱼肠。但鱼鳔和鱼肠我老家本地人就最受欢迎的。大鱼鳔晒干油炸切丝再加上丝瓜丝肉丝等煮浓汤非常好喝,鱼肠煎蛋也是非常好吃。

没吃过鱼肠打火锅的。但鱼肠蛋炒饭特别好吃 有种特殊的油脂香味。司徒可以试试,看看会不会对鱼肠改观。

(1) This type of hot pot is better, particularly for southerners, than the spicy one. (2) Boiling is not the best way to cook fish intestines. If you get the chance, try fish intestines foo-yung (omelette). (3) I see you had roast goose as starter, was it whole or half!? (4) Great video, entertaining as always; thank you for posting.

I guess it is plain soup base or no soup base at all. I don’t any color in it. But I am sure the food is already very flavorful because it is so fresh.

借楼主澄清一个真相,秦始皇陵不是秦始皇的陵,兵马俑也不是秦始皇的兵马俑。《史记.高祖本纪》记载:“羽烧秦宫室,掘始皇帝冢,收私其财”,项羽不但掘了秦始皇墓,还将里头的财宝一扫而空。阿房宫早被烧了,秦始皇陵早被掘了。那个秦始皇陵发现有"乐府"字样的乐府钟,而乐府是汉武帝才设立的。《汉书·礼乐志》:“至武帝定郊祀之礼……乃立乐府,采诗夜诵。"那个陵墓是汉代的。不是秦始皇的。兵马俑身上有臧宫二字,臧宫是东汉光武帝开国名将,而且兵马俑有发现汉代墓葬根本就不是秦兵马俑是汉兵马俑。所谓阿房宫遗址也不是什么阿房宫遗址。都是为了吹捧秦始皇的目的而指鹿为马歪曲事实。
